It was 4 o’clock again, and I had forgotten to let any sort of meat thaw for dinner. Dinnertime was rapidly approaching, and my plans of any kind of decent meal were flying out of the window because… no meat, no dinner. I live with some total carnivores! But then I remembered I had ham in the fridge, and that’s when ham and cheese lasagna roll ups popped into my mind. They’re the perfect effortless weeknight meal.

Just about every week now, we’ve been making it a priority to get out of the house for something other than school, work, and church. That means we’ve been enjoying a lot more meals at a nearby Italian chain. And the best part? I’ve gotten hooked on this delicious Chicken and Gnocchi soup. I’ve become such a fan that I had to figure out how to make it myself! You know what? It’s SUPER easy to make at home, and you’ll love this flavor, whether you’re serving it on it’s own or making it as a starter for your favorite pasta dish.
Thick and Chunky Pasta Sauce (Or How To Use an Overload of Tomatoes!)
It never fails. It seems like everyone I know with a garden starts the season with a tomato or two… and then suddenly? It’s an abundance. At the end of the growing season, my friends can’t give away their tomatoes fast enough! That’s why I’ve started looking for great ways to use that overwhelming amount of tomatoes from your garden to feed your family! If you saw, earlier in the week, I shared a great recipe for Spicy Tomato Ketchup. The ketchup recipe is one of my favorites, but since it just uses the juice of some boiled down tomatoes, you’re left with some pulp… and this is how to use it– in a chunky pasta sauce your family will LOVE!
Meat Lovers Pasta Bake
Do you like meat? And easy recipes? And recipes that can be made with leftovers and ingredients you have on hand?
If you answered yes, then you’re going to absolutely love this meat lovers pasta bake. If you answered no to the meat question, stick around… you can make this dish with veggies instead. But the meat part? Oh-so-good.
If you have pasta, cheese, diced tomatoes, and some leftover meat (pretty much any kind will work), then you’ve got dinner. Bonus points if you have pasta-friendly veggies like mushrooms and onions.
Chicken Bacon Ranch Pasta Bake
If y’all have been around the blog a day or two, you know I love the chicken, bacon, and ranch combo. They’re flavors that were just made for each other! So, when it came time to make dinner the other night and I had no idea what to make, I needed to see what I had in my pantry and fridge. I came up with a few items that made a big impact, and it all started with the chicken, bacon, and ranch I had on hand.
