Fall is upon us, and it’s seriously starting to get chilly… temperatures are dipping lower and lower and I’m pretty much ready to turn my heat on. The only thing saving my heating bill right now is a nice steaming hot cup of coffee. And what’s better with coffee than a really delicious piece of biscotti? Nothing. Except maybe a delicious piece of pumpkin spice biscotti, especially if you’re dipping it into incredible Roasterie Kansas City Air Roasted Coffee. Plus, it’s so easy to make, which means it’s the perfect gift for your Thanksgiving hostess, your friends, and, well, yourself. And since biscotti is a treat that ships really well, it’s also great for those friends who live halfway across the country. Here’s how to make this sweet pumpkin spice treat.
Biscotti starts out super simple– just use your favorite Pumpkin Spice cookie mix. I like Betty Crocker’s Pumpkin Spice cookie mix, personally. To the mix, add 1/3 cup softened butter, 1 egg, and 1/4 cup of flour. You’ll get a really thick dough.
Shape the mixture into a log, then bake it at 350 for 20 minutes. Let it cool for about 10 minutes before you start to slice it into biscotti.
Cut the biscotti into pieces about an inch wide. Turn the pieces onto their side and bake for 6 minutes, then flip them over and bake on the other side for 6 minutes. Transfer them to a cooling rack until they’ve completely cooled.
Once the biscotti is completely cooled off, melt a little bit of your favorite chocolate or white chocolate. I went with some semi-sweet chocolate bits and some white chocolate that was tinted orange for the fall season.
Once you’ve dipped the biscotti, you can drizzle it with other chocolate, or you can dip it in sprinkles while the chocolate is still wet, or you can just leave it plain– really whatever you’d like! The non-negotiable thing on this biscotti is to pair it with an amazingly delicious hot beverage– after all, half of the fun is dipping it!
If you’re from the Kansas City area, it’s pretty likely that you’ve heard of the Roasterie, or at least driven past their building with the iconic airplane on top. The Roasterie Kansas City Air Roasted Coffee is the perfect pair for biscotti, or for anything, really, and comes in a variety of great flavors. But until now, you almost had to be local to enjoy it at their great Roasterie location, one of the local coffeehouses they sell their coffee in, or at a local grocery store, or you had to order online.
Now, that’s not the case. Target stores around the region (think Kansas, Missouri, Iowa, and Nebraska)– 40 of them in total– are now stocking six great Roasterie blends, including one of my favorites, the Kansas City Blend.
The Roasterie often takes months to perfect a specific blend, and their team travels to the ends of the earth to find the best coffee, from single-origin coffees to fair trade options, they work hard to find the best beans, then air roast them to ensure great quality that brings out the best in each bean.
And since I insist on dipping my biscotti in only the best of local coffee, the Roasterie is a great choice. I love that I can now grab a bag when I’m shopping at my local Target store, like last week, when I picked up a bag of Costa Rica Don Quijote.
- 1 package (1 lb 1.5 oz) Pumpkin Spice cookie mix
- 1/3 C butter, softened
- 1 egg
- 1/4 C flour
- Chocolate for dipping
- Sprinkles, optional
- Preheat oven to 350.
- In a bowl, combine cookie mix, butter, egg, and flour.
- Shape into a log on a lined or greased cookie sheet, then bake for 20 minutes.
- Remove from oven, cool for 10 minutes, then slice into 1 inch pieces.
- Place pieces on their side, bake for 6 minutes.
- Turn pieces to other side, bake for 6 more minutes.
- Cool biscotti completely.
- Dip in melted chocolate, drizzle with additional chocolate, or dip into sprinkles while chocolate is still wet.
- Let dry before eating or mailing in an airtight container. Enjoy with your favorite Roasterie coffee or other warm beverage.
