Asian Dipped Almond Cookies

I absolutely love Chinese New Year. It’s such a fun holiday filled with tradition and excitement, and it’s just so exciting. And the year of the Horse this year? That’s really exciting. Today begins a very important celebration in the Chinese calendar… so important that it’s the longest holiday celebrated in their year. Because the Chinese calendar is based on the lunar cycle, the month starts on the darkest day of the lunar month (the first of the lunar month) and continuing until the brightest night, often the 15th day of the lunar month.

This recipe is so easy, that it is perfect for children to bake with supervision! This post will also give you a chance to brush up on some Chinese New Year and Fortune Cookie facts, so you can learn more about these cookies, and New Year tradition, while you bake together!

While fortune cookies aren’t inherently Chinese, they ARE delicious, and I had to try my hand at creating an Asian-inspired cookie that tastes very similar to a fortune cookie, complete with fortune printables for you!

The first step to these cookies is to download the printable found at the bottom of this post, and cut apart the fortunes. Trust me, you don’t want to start the cookies without doing this step, or they’ll break when you try to roll them, as they’ll have cooled too much. It’s good to do this step first.

So, with this being the year of the horse, it’s important to realize that those born in the year of the horse are considered to be cheerful, skillful with money, perceptive, talented, witty, and good with their hands.

As a dragon, I’m enthusiastic, quick-witted, and sometimes a little hot-headed. But I inspire confidence, and that’s a good thing. Plus, when life knocks me down, the Chinese Zodiac says I’m dauntless and get right back up. I think Dragon suits me well!

Gather your ingredients next. You’ll also want to add white chocolate chips and sprinkles if you plan to dip them, as pictured! They’re tasty undipped, too, but they’re so pretty dipped! To be a little clearer, you’ll want 2 egg whites, 1/4 teaspoon of almond extract (a little goes a long way!), 1/2 cup flour, 1/2 cup sugar, a generous pinch of salt, and the white chocolate and sprinkles.

Rembrandt, Harrison Ford, Aretha Franklin, Chopin, and President Theodore Roosevelt are all Horses according to Chinese Zodiac, so if you’re a horse, you’re in good company.

Start by beating the egg whites and almond extract until they’re foamy, but NOT stiff. They’ll look nice and frothy, as shown.

At Chinese New Year celebrations, people don red clothing, decorate the place with poems on red paper, and red envelopes are given to children, containing lucky money! Red is significant because it represents fire, and fire is a great way to drive away bad luck! For the same bad luck hates fire reason, fireworks are shot off in beautiful displays.

In a separate bowl, you can sift your flour, sugar, and salt.

While fortune cookies aren’t Chinese, they actually might not be Chinese-American, either. Invented in California, there’s a lot of debate about how they got their start. Today, though, they’re definitely equated with Chinese food in most Americans’ minds, just like Chop Suey (which is also not Chinese).

Slowly mix your flour mixture into your egg mixture to create a cookie batter.

A possible source of the fortune cookie is David Jung. He immigrated from China and opened a restaurant in LA. He saw poor walking the streets and, in 1918, was rumored to hand out the cookies free to give them something to eat, each containing inspirational Bible scripture, written for the restaurant owner by a minister.

Drop tablespoonfuls of the cookie batter far apart on a greased cookie sheet. Your oven should be preheated to 400.

Makoto Hagiwara, a Japanese gardener living in San Francisco, is another possible source of the fortune cookie. He designed the famous tea garden in Golden Gate Park; he was fired from his gardening job when an anti-Japanese mayor took office, but later, a different mayor reinstated him! As a thank you, he decided to bake cookies with thank you notes inside, passing them out in the Japanese Tea Garden in 1914. They became so popular that they were a regular staple of the tea garden, and were even shown off at the Panama-Pacific Exhibition, a World Fair in San Francisco in 1915.

Both San Francisco and Los Angeles claim the cookie, and even historical review courts can’t agree.

Spray a spoon with cooking spray and use it to spread the cookies into a wafer-thin layer. It’ll make them have a nice crispy crunch when cooked!

Originally made by hand using chopsticks, today’s fortune cookies are made by machine. For good reason, too– the largest manufacturer of fortune cookies ship out over 60 million cookies every month. That’s nearly 2 million each day!

This is when you have to work quickly, and because the cookies are SO hot, it’s a job best for adults. As soon as you pull the pan from the oven, place a fortune on it and roll the cookie up. It will be VERY hot, I’ll say again.

If you let the cookies wait more than about 45 seconds, they’ll start to crack when rolled– that’s why you need to cook only 3-4 to a pan.

If you place the folded cookies next to each other, they’ll keep each other from unwrapping themselves until they cool off a bit.

From here, you’ll want to melt white chocolate and dip the ends in the chocolate to create the dipped look shown in the first image. I also chose to sprinkle some adorable sprinkles on while the chocolate was wet.

If you’re concerned about the cookies being too hot for you to comfortably roll, are cooking with very young kids, or just don’t want to risk breaking any, you can always leave them flat. I packaged mine up a few to a bag, with a fortune in the bag! Same flavor, same fortune, less rolling.

You’ll get a dozen cookies out of the recipe! And you can fight it out amongst yourselves whether the cookies are from LA or San Francisco, but either way, no one will be arguing that the flavor is amazing!

Finding God in Robin Hood

Growing up, my favorite movie was easily Robin Hood. I could’ve watched Disney’s Robin Hood on repeat. In fact, many times, I did. I remember the little squiggles on the TV screen as I hit rewind on my VCR so I could watch the adventures– and love story– of two foxes and their friends. I adored the element of danger in Robin Hood standing up to the government, the excitement as Maid Marion and Robin Hood fell in love again, and the sweet children and people of the town who rooted for Robin Hood and his love the whole time.

So, when this beloved classic became available on Netflix, I knew Zach just had to watch it! I was certain he’d love it… after all, he loves animals and music, and Disney’s Robin Hood had both. It was sure to be a classic we’d both love… right?

Wrong. I’d turn it on, and within 30 seconds, Zach would exclaim “No! No no no!” and turn it to something mindless like Pingu. Again. For the millionth time. I’d let him watch his show, of course, but then, next time, I’d direct him right back to Robin Hood, turning it on, letting the first whistles on the minstrel ring out, and once again, I’d be greeted with the resistant “No!” from Zach.

Why couldn’t he watch the movie? Maybe I didn’t get him far enough into it… I’d try next time starting it in the middle, or someplace exciting, and let him see the cute, fuzzy little animals singing and dancing along.

And each and every time… “No.” No matter what I tried, “No.” Eventually, I resigned myself to the idea that Zach was never going to watch Robin Hood, and that my life would be filled with endless sounds of “Nook nook!” and gibberish as his eyes glazed over during Pingu.

Then, two days later, I handed Zach the Kindle before nap. I went to get drinks and a snack for him, and returned. I said “What are you watching, sweetie?” “Hood!” I glanced down, and to my surprise, Robin Hood was playing on the Kindle. He watched it, and watched and watched and watched it. For about 3 days straight, everything was Robin Hood.

I kind of feel like this applies to my faith journey sometimes. I feel like sometimes God puts something in front of me and says “Here. Read this Bible.” I inspect the cover, then set it aside… “Not now, God. I’m reading Divergent, and it’s at a really good part.” “Here, Jenni. The Bible.” “Not now, God. I just got this great book on my Kindle!”

“Jenni. Why not listen to this great song?” “Um, yeah, that’s great… but I’m really into listening to Lorde right now. It’s super catchy.” “But Jenni, praise my name with singing!” “Yeah, but, God… Tennis Court. It’s a fun song.”

While obviously, I don’t think God is pushing every praise song and Bible verse at me on a regular basis, I do think that sometimes, I’m ignoring God’s wants because I’m really in to something else. It’s like giving up Robin Hood for Pingu. What he’s offering is probably really great, and I’d likely love it, but I’m too busy stuck in my rut of what I know I like to give in and listen to what he’s trying to get me to watch, listen to, and do.

In many ways, Salvation is just like that. I’ve seen so many people, myself included, in the past, blatantly ignore the salvation God was offering, that promise of life everlasting, not because they didn’t want it, but because they were fixing their eyes on something else instead of God. I feel like, as a culture, we get so wrapped up in what’s right in front of us, whether it’s marathoning Breaking Bad on Netflix, or reading the latest and greatest from James Patterson, that we’re neglecting to notice what God has right in front of us. As a culture, we’re forgetting to sit down and get lost in the Word, forgetting to listen to a new praise song, or pay attention in church. We’re tapping our toes to Get Lucky by Daft Punk, but just barely mumbling out the words to the songs the praise team is singing in church.

Basically, we’re turning down a great classic Disney film, and choosing some weird, gibberish-speaking penguin… except on a much more important scale with far greater benefits and consequences.

I think that, even though Robin Hood is completely insignificant when it comes to something major like Salvation, little things like this serve as a reminder. It’s not Zach saying “No! No no no!”

It’s me. I’m saying it. I’m turning down that time I could be spending with God, enjoying something so much more amazing than I can comprehend. And it’s time for me to decide, just like Zach did when I left the room, to start paying attention to the great things right in front of me.

Strawberries and Cream Miracle Cookies

These cookies are nothing short of miraculous. Well, I mean, look at them. They look like your standard, very delicious, absolutely cute cookies.

But, they’re just a handful of ingredients, and they take almost no time at all. These are the kind of cookies you make when you say “I have to have cookies! Like now!” Or the kind of cookies you say “Oh! Crud! The school bake sale is today and I forgot to bake something!” But, they’re also the kind of cookies you make when you need something delicious, time-pressed or no, the kind of cookies that taste so much harder than they are. And that’s what’s miraculous, and also very, very dangerous about them.

For the base cookie, you just need a box of cake mix, a carton of whipped topping, and an egg. You’ll also need powdered sugar to roll the cookies in before baking. I chose to add in some white chocolate chips for that whole “and cream” bit. Strawberry is a fun, and unexpected, cookie flavor for Valentine’s day. While this cookie could easily be made with chocolate, or with red velvet, you’ll love the flavor of a strawberries and cream cookie amidst scores of chocolate choices in the Valentine’s season.

This is where things get almost stupidly easy. You toss your cake mix, your Cool Whip, and your egg into a bowl, and mix. It’ll be an extra thick cookie batter.

Like very thick! At this point, fold in your white chocolate chips. Then, roll the batter into balls.

Roll those balls in powdered sugar. Relish in the fact that you’re not having to take a picture one handed of this step– it’s tricky!

Place the balls several inches apart on a cookie sheet, and bake at 350 for 9-10 minutes. Let them cool for a few minutes on the cookie sheet, then transfer them to a cooling rack.

Waiting for them to cook is hard. You may be surrounded by people with their mouth open like little birds, just waiting for a taste of warm cookie, fresh from the oven.

Once cooled, you’re able to enjoy them! They’ve got a really great flavor, and they’re so easy, anyone could make them. The strawberries and cream is unique and exciting, something new!

They’ll be gone quickly! I promise!

Valentine’s Biscuits with Chocolate Gravy

Valentine’s Day is approaching fast, and I’m really excited, actually! I wanted to make sure that Valentine’s Day would have a breakfast as special as the holiday. While visions of pink pancakes with strawberries danced in my head, I knew that a marriage of two family recipes would be perfect for V-Day… which is why I had to try biscuits with chocolate gravy!

The biscuit recipe is an old family recipe that I found in a church cookbook from about 40 years ago. I’m a huge fan of old church cookbooks– they seem to have the best recipes in it, some great down-home cooking. What I loved was finding this gem of a recipe– not only was it in a church cookbook I’ve almost worn out, but it was a recipe from my own family!

As for the chocolate gravy, I had honestly never heard of such a thing until my grandfather moved to Arkansas. In visiting, many of his friends would mention chocolate gravy. I was a bit alarmed– chocolate gravy?! That sounds… odd. However, after he grabbed the recipe for me, I was able to find out why it was such a beloved recipe.

As a bonus, one part of the recipe is kid-friendly, which means it’s even better for Valentine’s Day– the kids can pitch in and make breakfast in bed!

You’ll want to gather the ingredients shown above, plus your favorite red food coloring. I personally love Americolor’s “Red Red.” It’s the most vivid with the least amount of effort. Of course, if red isn’t your thing, you can try any color– your loved one’s favorite color, or a muted Valentine’s tone, like purple. You can also switch the red out for team colors on gameday– think Chicken and Biscuits in team colors.

Start by sifting together 2 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.

Next, add 1/3 cup of shortening (you can also substitute butter for a buttery flavor). This should be COLD. Like, nearly ice cold. You want it to kind of chip when you cut it. The colder it is when you add it at this step, and the less the dough is handled, the flakier your biscuits will be. See, when your fat (which is either shortening or butter, or lard) is cold, and it hits the hot oven, it will melt, leaving pockets of air where it melted. If you use warmer butter or shortening, it will melt, but it won’t be in chunks to leave those layered pockets, leaving a denser, less flaky biscuit.

Add in two cups of milk. Again, the milk should be very cold– the colder it is, the colder the butter or shortening stays as you combine the ingredients and roll it out, which will leave that flaky texture I mentioned earlier.

It’s now that the fun starts…

Add in a couple of drops of food coloring, then fold and pull to get a swirled effect, not combining too much– if you knead too much, you’ll warm up the butter. You want a very lightly swirled effect.

Gently flour your surface and rolling pin, then roll out your biscuit dough to 3/8 inch (you can eyeball it! Just try to get it under a half inch). When you get your dough rolled thin, you’re going to fold it in half, then fold it in half again the opposite way (so fold it towards you, then side to side, or vice versa). Roll it out slightly more– to just over half an inch. This folding and re-folding will also add layers to your biscuits, allowing that flaky texture (in addition to the cold shortening).

Cut the biscuit using a round cutter (or a heart cutter, if you want to be extra festive. Or a glass if you don’t have a round cutter. Or a knife).

You’ll want to place your biscuits fairly close together on the greased pan. If they’re close together, they’ll rise up instead of spreading out. Bake at 450 degrees for 8-9 minutes, until they’re golden.

The biscuits are very easy for kids to help with! They can sift, mix, knead, and cut the biscuits out.

While the biscuits bake, you can start on your chocolate gravy!

Start by melting a full stick of butter in a saucepan over medium heat.

Add in 4 tablespoons of flour and 4 tablespoons of cocoa; you’ll also need 3/4 cup sugar at this stage. Keep stirring!

Stir in 2 cups of milk.

You’ll want to keep stirring over medium heat until it’s thick. When I first made chocolate gravy, I thought “Is this thick enough? How will I know when it’s thick?” When you first start to notice it’s getting a touch thicker, keep stirring a little longer and you’ll see what I mean when I say “You’ll know it when you see it.” When it’s about gravy consistency, you’re there. Think about the consistency you want when you pour a ladle of delicious gravy over your biscuits, and when you get there, stop stirring, remove from heat, and serve.

Now, take your honey some breakfast in bed and enjoy!

For the Biscuits
  1. 2 C Flour
  2. 1 1/2 tsp Baking Powder
  3. 1/4 tsp Salt
  4. 1/3 C cold shortening
  5. 2 C cold milk
  6. Food coloring, if desired
For the Chocolate Gravy
  1. 1 stick butter
  2. 4 Tbsp flour
  3. 4 Tbsp cocoa powder
  4. 3/4 C sugar
  5. 2 C milk
For the Biscuits
  1. Sift together flour, baking powder, and salt.
  2. Add cold shortening until just combined.
  3. Add milk to form dough, being careful not to over-handle.
  4. Gently add in food coloring.
  5. Roll dough out to 3/8 inch, fold over twice, and roll to 1/2 inch.
  6. Place close together on a greased baking sheet.
  7. Bake 8-9 minutes at 450 degrees.
For the Chocolate Gravy
  1. Melt butter in saucepan over medium heat.
  2. Stir constantly while adding sugar, cocoa, and flour until combined.
  3. Stir in 2 cups milk, continuing stirring until thickened.

My Heart for Homeschooling: Part 2

I’ve previously talked about my heart for homeschooling in part 1 of this post. I feel like there are so many reasons that it is important for me to homeschool my son, and why a lot of other people homeschool, and it’s why I’ve felt compelled to share my reasoning here. After all, if I have a voice, I may as well work to be heard, especially when there are a lot of misconceptions out there about homeschooling.

Homeschool students have a great opportunity for building social skills. One huge misconception is that homeschooled kids don’t have social skills. Sure, there are plenty of examples out there of homeschooled students who have zero skills. But there are far greater numbers of students who have amazing social skills built in homeschooling. My brother, for example, is in competition soccer and takes improv theatre lessons. He’s built a friend group and has social skills, allowing him to be very social and have those great communication skills that are essential. There are many options for homeschooled students to get involved, whether it’s a local group of homeschoolers or an extracurricular activity to join in. Homeschooling isn’t like it used to be; with a growing number of people homeschooling their children, there is a greater number of homeschooled students to connect with, allowing huge networks of students to build, grow, and enjoy each other’s time.

Homeschool students have a lot of extracurricular options. As I mentioned above, my brother, a homeschool student, is able to take improv theatre, play competition soccer, play Minecraft on a server that is specifically for local homeschooled students, and more. Students can take art classes, music classes (both solo and in group settings, similar to a band class), drama, participate in community theatre, play sports both competitively and non-competitively, and more. There are so many options for homeschooled students to learn skills and participate with each other.

Some studies have shown that homeschooled students have better self-esteem. Not only are many homeschoolers removed from the trauma and pressure of bullying (after all, closer-knit class groups for extracurriculars and their school day being spent largely around family versus around peers allows for more close monitoring to stop bullying in it’s tracks, as well as less opportunities to allow it to begin in the first place), but they’re also spending their days in an environment that tends to foster a feeling of safety. When kids feel safe at home, and safe with their parents, they’re able to build that self-esteem in a safe environment. Not to say there aren’t horror stories out there– there are in every situation–but the majority of students who are homeschooled are able to build higher self-esteem. Not only is bullying cut, and a safe environment available, but homeschoolers also tend to learn at their own pace (and challenge themselves). By having a better grasp on their skills and by being able to get personal attention when they’re struggling, rather than being put in a remedial class or being held behind, they’re able to acquire skills without feeling like they’re a failure or having the emotional strain of not being “good enough.” Unfortunately, students who aren’t grasping material well are pushed farther behind their peers, and students who are grasping material too quickly are often slowed down, resulting in a cycle of falling farther and farther behind, culminating in peers, and sometimes even teachers, shaming them. In homeschooling, this isn’t the case. All-around, it’s easy to see why students who are homeschooled tend to have better self-esteem in a loving environment.

Homeschooling is widely accepted. Over 4% of children in America are homeschooled, and it’s growing in numbers every year. That doesn’t sound like a lot, but if you took all of the students in the 10 smaller states in America, you’d get the SAME number of students as are homeschooled currently. It’s a pretty big number, actually. Some universities have specific policies in place for accepting homeschooled students, even if those students didn’t earn an accredited high school degree (since homeschools are essentially unaccredited schools in many states). I went to college with many homeschooled students, and all of them were at or above my level as a student entering from public school.

Students have less access to drugs and alcohol in homeschool, and are less likely to over-indulge later. Studies have shown that students who consume alcohol before the age of 21 and are around it in a peer setting (a party, in a limo on the way to prom, at a friend’s home, even their own home) are more likely to abuse the substance later. Because families that homeschool tend to spend more time together, there’s less opportunity for a student to indulge, say, after school at a friend’s house. Homeschool families don’t really have latch-key kids, so the kids spend fewer hours home alone, with fewer opportunities to get into the wine cabinet. Don’t think private school kids are immune to this trouble, either… it actually turns out that statistically, because families who send their kids to private school tend to have access to more funds, kids are actually MORE likely to use and/or abuse substances than they would in public school… and, other studies have shown that if they are caught, they’re less likely to face serious consequences. By homeschooling, you can remove your child from an equation like that entirely, or at least severely reduce their chance of dealing with it. You can do so even more if you’re a home like mine, where alcohol isn’t even around.

There’s less violence in a homeschool situation. There’s been a lot of talk about bullying, cyberbullying, school shootings, fights, and suicide. While again, there are horror stories out there, homeschool environments are largely safer. There is a lot less risk of cyberbullying when kids are homeschooled, and parents who are involved with their children’s studies (whether they’re homeschooled or public schooled) are more likely to pick up on bullying and help stop violence in it’s tracks. Homeschooling, by nature, requires the involvement of parents, and it’s proven that kids who are homeschooled are less likely to be involved in (as a victim or a perpetrator) violence, whether emotional or physical.

My Heart for Homeschooling: Part 1

I’ve shared on here about homeschooling a few times, and talked about why it’s been important to me. But I will say, it’s one of those topics that I get a lot of questions about. People ask me “Isn’t it time consuming?” Yeah, it is. “Don’t you ever want a break from your kid?” I know I might be weird, but no, I really don’t. There are those times where I’m really craving a hot shower without hearing “Mommy!!!” but for the most part, I love being with my kiddo all the time. “Aren’t you afraid he won’t be a social kid?” Yeah, to some degree. But there are ways around that.

So now, I’ve decided to put all of it on the table and spell out why homeschooling is important to me. If you’re considering homeschooling, this may help make things clearer for you. If you’re not considering it, but you’re curious about it, this will answer some questions, I’m sure. If you’re not into homeschooling, then this might be eye-opening and show you a little bit of my reasoning for doing it.

But first, what is homeschooling? Basically, it is teaching children in your own home. Long before there were schools in buildings kids would go to, there were home schools, where parents taught their children essential skills like money management, clothing repair, cooking, and trades, as well as tasks like how to read (typically to read the Bible or other religious texts).

Schools have a habit of dumbing things down for kids.

Yes, this may be my opinion, but I have to share that kids who are homeschooled tend to be grade levels ahead of children who are public or private schooled, and have higher logic and reasoning skills. Additionally, schools tend to teach towards the test. Do some homeschools teach towards the tests? Absolutely. But I think you’ll find, through digging, that homeschool largely teaches towards practicality. I was public schooled, and so was my brother (much more recently). I cannot tell you the number of hours spent solely preparing to get good scores on standardized tests, to the point that kids learn materials that are beyond their comprehension level, recite them on the test (basic parroting) and then forget them just as quickly as they learned them, only to repeat the cycle again and again. How many times did I start the school year in American History at the beginning of time, only to wind up in the industrial revolution every time? With homeschooling, since it is more individualized, it’s very easy to study and then pick up where you left off, meaning you move from ancient history to modern day and study history in a chronological order, rather than studying parts of history being tested on and moving on.

Schools tend to pigeonhole kids and go with the idea that all kids go through post-secondary education.

Not every student is going to go on to college, be a doctor, or use advanced calculus. Some students are learning those skills that they aren’t likely to use, to the point that they’re not taught skills they need. How many times have you been in line at the checkout somewhere and handed someone cash for your purchase, only to discover that, without a machine telling them, they can’t count change back to you, or even know how much change you’re owed? I’m not saying it’s that way in every case, but you can’t deny it’s probably happened to you. Further, how many of those teens do you think have taken algebra, geometry, trig, but have no idea how to budget or count money? I’d reckon that most of them fall into that category. They’re being prepared for an education they may or may not move on to, but not being taught how to manage their lives.

My boyfriend and I were chatting not too long ago about budget, and about how it was important to him to find out all of the costs, including utilities, and the costs of what furniture he needed, before settling on what apartment to live in. He wanted to make sure that, between rent, bills, and other life expenses (like groceries) that he was choosing an apartment that was affordable, considering his income. He wanted to be sure that he wasn’t choosing an unreasonable apartment, or that he wasn’t skimping where he could afford something more comfortable, so he compared prices.

At the store, it’s something I do regularly… sometimes, with coupons, a name brand is cheaper than an off-brand. Sometimes a big package looks like a great deal, until you end up pricing it out per unit, and find out it’s actually not a better deal at all!

Unfortunately, because school goes with a college-focus, some kids get lost in the cracks. By pushing kids into advanced math and science, some kids are falling behind, despite the fact that they’ll not be using that math in the future. Am I calling for schools to do away with advanced math and science? Absolutely not. It is GREAT… for the kids who will use that in future professions. For others, it’s taking focus away from other things they could be studying that will benefit their future.

There is a local high school here, and yes, a public school (I’ve never said public school is bad, just simply stated that homeschooling is right for my family), that allows students to select a “track.” For example, if you pick the track that you’d like to learn to work in a restaurant, you’ll take classes that relate directly to that and learn everything from front-end (waiting tables, etc) to budgeting and inventory, all the way to the back of the restaurant. Students go on to work in careers in food service, and often become management at these places based on their time at this high school, teaching them hands-on skills that they need for a trade that interests them. Unfortunately, that school is the exception, not the norm.

Because of one-on-one (or one-on-handful, depending on your family size), as opposed to one-on-twenty learning, kids can pick up skills faster. By no fault of their own, teachers are at a disadvantage. Teachers have to teach large amounts of children- sometimes in excess of 20 in a classroom, and when they do, it means that they’re having their attention drawn a minimum of 20 different ways. Teachers not only have to deal with an abundance of learners at different levels, but also with outside forces. When my brother was in school, in a very safe, small-town neighborhood, one student in his classroom was arrested, multiple times, IN class, as early as first grade. When that happens, the entire class stops. And even after the student is removed, the chatter continues. Do you really think significant learning is happening during this time? During homeschooling, you’re streamlining the number of students.  You have only your children, which allows for less distractions. Unless your family is up to something I can’t fathom, I highly doubt any of your students would be arrested during class in their homeschool setting. I think it’s important to also consider that by having a smaller class size, it’s easier to tailor studies to your students. Have a student who is racing ahead in reading? Great! Encourage that with more challenging books and further opportunities to read. Perhaps they’re a bit behind in math? No problem. You have the time and ability to work with them as needed to help boost their math knowledge, or you can go over the problem set as long as they have questions.

In most public school settings, a teacher has a limited amount of time to get a lot of information in. That means they can answer a handful of questions about a task, and then they must move on to the next task. It doesn’t allow children to ask questions until they understand, but rather, allows them to ask just until time is up before being forced to move on.

With a homeschooling setting, you’re able to take the pace that you need to. Even if you have multiple children, you likely have fewer students to divide between than most teachers, and are able to tailor some time to making sure your child firmly grasps an entire concept before moving on.

Food allergies are a big concern for many families. While it isn’t a primary reason that we’ve chosen to homeschool, I know many families who homeschool, at least in part, due to special food needs by their family members. Enter a public school cafeteria and look at some of the choices available. If you have an intolerance to gluten, a peanut allergy, and a handful of other allergies, you’re going to have a very bad time. One perk of homeschooling (but certainly not a primary reason for my family personally) is that anything I’m interested in feeding my son, I can. It means that I can create a well-balanced menu catered to his particular tastes and dietary needs. I can imagine that families who have very specific needs when it comes to diet find this even more appealing.

Homeschoolers have a tendency to finish school early. Once finished with high school, students often have the option of going to many schools around the nation, or even getting an online college degree. In some cases, homeschool students can earn a two- or four-year degree before their public or private schooled counterparts, allowing them a chance to get ahead in a job market and earn experience in the “real world” while their peers are still in college. While obviously this won’t happen in all cases, I’ve seen many examples of this happening personally, including friends I interacted with in college. Mind you, in public school, I was able to graduate a full year early, which meant that I was one of the youngest people in my university. However, I clearly wasn’t the youngest; everyone younger than me was homeschooled. It just opens a lot of doors that might not otherwise get opened.

You’re able to set your own goals for homeschooling. Homeschooling can be tailored to your child’s interests. My brother is a very hands-on learner, so rather than reading about electricity, he’s able to experience it firsthand by assembling his own circuits. To learn fractions, he can use cooking or other hands-on examples. His goals, along with my mother’s goals for him, allow him to achieve great results. I can set specific goals for my son, like mastery of alphabet and numbers, and then when we achieve those goals, we can plan new goals and build upon what we’ve learned. Because we’re able to do individualized education and paying attention to personalized needs moreso than in a public school setting, you’re able to meet goals more quickly.

Birth Control

The other day, a facebook friend of mine posted that she’s having her third child in about as many years. I’d say this is an anomaly amongst my facebook friends, but it’s not.

I’m starting to wonder if there’s a reason they’re diving right back into having kids. Because I sit here looking at my two year old, and, despite loving him more than anything else in the entire world, when I see people having a second child so soon after their first, I have to believe that they’re out of their entire stinkin’ mind.

Let me give you a little background about why I feel that way.

About a week ago, my son comes to me and brings me a slinky. “Cool slinky, Zach!” He replies “Mom!” and pats his thingie. “Um, Zach, the slinky doesn’t go there.” He repeats his request again and again. I calmly remind him, “No, we do not put slinkies on our thingy.” He says “Okay!” and I hand him the slinky, thinking he understands. The next thing I know, he’s torn his diaper off, stuck his thingie through the opening of the slinky, and started peeing ALL over the floor.

Oh. My. Gosh.

I’m torn between crying and dying laughing. I grab the slinky and toss it in the sink to be sanitized thoroughly. I go to grab a towel, and then I hear it. “Splash. Splash.” Oh no. Oh no no no no. I run back in and Zach is JUMPING in the pee puddle. Like it’s a rain puddle or something!” I remove him from the situation, wash his feet, and re-diaper him, then I run over and begin cleaning up the puddle as quickly as I can to prevent another Singin In the Rain style incident from him. As I just finish cleaning up the puddle, I see a streak out of the corner of my eye… I turn to look, and there is a bare butt running across the room.

You’ve GOT to be kidding me.

I would say that incidents like this were few and far between, but that would be a lie. The other day, we visited my boyfriend’s apartment for New Years Eve, and Zach was using some chopsticks as drumsticks, like he routinely does, because everything stick-like is a drumstick, obviously. As we went to clean up for the night, one of the chopsticks was missing. Oh well… it must have slipped under a couch or between cushions.

Then, overnight, suddenly things got cold. Like really cold. Because freezing temps outside suddenly crept in when the heater stopped working. Why did it stop working, you ask? Because a chopstick was jamming the fan.

Yup. That’s my boy.

I’m not telling you these stories because I think having kids is crazy. On the contrary, actually. Zach has provided me with so many amazing experiences, so many hilarious stories, and so many cuddles, smiles, and countless laughs. He’s exactly the reason I WILL have more kids someday.

…he’s also the reason that having more kids anytime before he’s at least four and out of this phase is NOT something I want to happen.

I never understood my mom when she’d say “Kids make the best birth control.” I also didn’t understand why she waited 12 years to have my brother after me, and still don’t, because I was a perfect angel of a child.

But I get it now, the kids are the best birth control. Because after an exhausting day of slinky pee, jammed air conditioners, and entire boxes of Goldfish poured out on the floor, I wouldn’t trade my life for anything, but I also couldn’t imagine adding a second child to the list. All I want is to go to bed, pull the covers over my head, and pray for more than 3 hours of sleep so I can wake up and do it all over again the next day.

My son is the best possible blessing that God has ever granted me. He is sweet, adorable, and has the cutest face, especially when it is covered in eggs and bits of chocolate. He has so much compassion, love, and empathy. The other day, I was worn out from a workout and sat on the bed panting and sore. Zach came over to me and said “Mom! Are you okay?” He patted my back, rubbed my arm, and gave me a hug.

I love having a child. I love his energy, spirit, and the way he responds to everyone in love.

 

And, because of him, I’d like to wait awhile for another, thankyouverymuch. To my Facebook friends who are having another… and another… back-to-back, either your little ones are still in their “cute, silent, baby phase” when you decide to have more, or you are a stronger woman than I am. Because I have no idea how you’re managing without losing your mind.

Mom’s right. Kids DO make the best birth control.

Hearty Cheeseburger Soup

It’s cold outside. Like, frigid. I should be used to Midwest Januaries by now. After all, every January of my life has been spent here. That doesn’t make the 5 degree temperatures any less surprising. It seems like a lot of places are even colder. I mean, Canada was colder than Mars just recently, and a major winter storm has been dumping snow everywhere.

That’s why it’s perfect to have a really hearty cold-weather recipe in your stash. This cheeseburger soup fits the bill.

You’ll want to start by browning about a pound of hamburger, then draining it and setting it aside. With soups, I’ve found that they’re great for eyeballing ingredients– if you have approximately what you’re looking for, then you’re able to produce a delicious soup without as much effort. Soups are just so forgiving. It’s also nice when you want to add or subtract ingredients, just in case you’re snowed in.

While cooking your ground beef, start dicing an onion. You’ll want it in small dices, nice and fine.

In a nice soup pot, you’ll want to melt 2 tablespoons or so of butter. Add in your diced onions and about 1 1/2 cups of shredded carrots. Cook, stirring every once in awhile, for 10 minutes, or until the carrots and onions are tender.

While you cook the carrots and onions, peel and chop up 8 cups of potatoes into bite-size pieces. That’s about 6 medium potatoes, if you’re counting.

Add a carton of chicken broth to the onion/carrot mixture, then fill the carton halfway with water, and add that, as well. Toss in your potatoes and your ground beef. Bring this to a boil, then reduce the heat to low and cover.

Melt the rest of your stick of butter (6 tablespoons, if you’re not using a stick or using margarine instead) in your now-empty ground beef skillet, keeping the heat medium. Add in 1/2 cup flour slowly, whisking the entire time, for 3-5 minutes. Stir this into the soup, bringing it back to a simmer.

Reduce the heat to low, and add in some salt and pepper, 2 cans of evaporated milk, and 16 ounces (half of the large block) of Velveeta (dicing it first helps it melt faster!)

Stir while cooking until the Velveeta is melted, then serve. Rolls are a great addition to this, as well as toasted bread rounds, as pictured. The toasted bread rounds add a nice crunch to the soup.

This soup is a total crowd-pleaser, and it really is not hard to make. It is a perfect soup for staying in with the family before curling up cozy under blankets.

  1. 1 lb ground beef, cooked and drained
  2. 1 onion, diced finely
  3. 2 Tbsp butter + 6 Tbsp butter
  4. 1 1/2 Cups carrots
  5. 1 tsp basil
  6. 1 tsp thyme
  7. 8 cups (approximately 6 medium) potatoes, cut into bite sized pieces
  8. 1 Carton chicken broth
  9. 1/2 Cup flour
  10. 2 cans evaporated milk
  11. 16 oz (half block) Velveeta, diced
Instructions
  1. Melt 2 tablespoons of butter in the bottom of a large soup pot. Add in diced onions, the herbs, and shredded carrots, stirring until tender.
  2. Dice potatoes while onions and carrots cook.
  3. Add one carton chicken broth to soup pot, then fill carton halfway with water and add that in, also. Put potatoes and ground beef into the soup pot.
  4. Bring soup to boil, then reduce the heat to low and cover.
  5. Melt 6 Tablespoons butter in a skillet on medium heat, and add flour slowly, whisking for 3-5 minutes.
  6. Stir flour mixture into soup, then bring the soup back to a simmer.
  7. Reduce the heat to low, then add in salt and pepper, evaporated milk, and Velveeta.
  8. Stir until Velveeta is melted, then serve hot.
Notes
  1. Tip: Rolls or toasted bread rounds make a delicious addition to this soup. Or, top with croutons!

Grandma Sybil’s Banana Bread

Some recipes are worth a sore wrist from stirring. Some are worth doing the old-fashioned way. And I’ve found that, even though there are a million and one ways that you can be creative with food, it’s good to have some staples in your recipe collection that are tried-and-true. This banana bread meets all of those requirements.

I first encountered this recipe in the recipe boxes I inherited from my grandfather. A nondescript recipe handwritten on a stained and tattered card, it held a lot of promise, and I kept saying “I’ll make this sometime when I have bananas that need to be used before they turn.” However, when I finally got around to making the bread, I realized it was a recipe worth leaving on top of the stack. It’s a favorite in my home, and I’m certain it’ll be a favorite in yours.

Because this recipe has to cool overnight for easiest slicing, it’s a great bread to make, cool while you sleep, and slice for breakfast the next morning. And, it’s easy enough that you can make it any night of the week.

The recipe starts with sifting together 2 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of salt into one bowl.

In a small liquid measuring cup, you’ll want to put a tablespoon of vinegar, then fill it to 1/2 cup with milk. Set this aside for a few minutes. If you’d rather use buttermilk in place of the vinegar-milk mixture, you can– they’re essentially the same thing.

In a second bowl, cream 1/2 cup shortening, then slowly add 1 cup of sugar. To this, you’ll add two eggs, one at a time, beating until light and fluffy after each.

Before you even start the recipe, it helps to bring eggs to room temperature. See, chilled eggs didn’t used to be an issue. Farm fresh eggs are shelf-stable, and don’t need to be refrigerated. Many farm-fresh eggs are stored at room temperature from the time you get them. In the UK, even store-bought eggs are kept unrefrigerated, completely shelf-stable. The difference between the UK and the US is that in the UK, ALL hens are required to be vaccinated for salmonella. However, in the United States, vaccinating hens is a choice– not a requirement. That’s why store-bought eggs in the US are suggested to be refrigerated. Additionally, in the United States, we’re serious about egg washing– which means in addition to washing off the dirt and grime from the freshly laid eggs, we’re also removing that barrier that helps prevent yucky stuff from getting into the eggs. Unfortunately, sometimes in cleaning, we add more dirt. It happens. Bringing them up to room temperature before baking, however, is totally safe.

So, you have a light and fluffy shortening-egg-sugar mixture. You also have a flour mixture, and a milk mixture. Finally, you’re going to make one last addition in a separate measuring cup– 1 cup of mashed bananas. It took 3 very ripe bananas to make a cup.

In small amounts, and alternating between them, add the flour mixture, the milk mixture, and the banana mixture, whisking/stirring after each addition as it continues to thicken from the flour. While I’m positive you could use a Kitchen-Aid or hand mixer, if Grandma Sybil was mixing by hand, so was I. I wanted to try this recipe as authentically as possible– making it just as she did.

Turn the batter into a greased bread tin, and bake for 60-70 minutes. Mine was done after 65 minutes in a 350 degree oven. Remove the bread from the pan, cooling overnight, or at least for several hours, before slicing.

You can, of course, add chopped walnuts to your bread. I chose not to, since my family has enough nuts in it that adding more seemed counter-intuitive.

This bread is really good microwaved for another 10-20 seconds and spread with a little bit of fresh butter.

Once you try it, you’ll realize that it’s a staple recipe, worthy of a hand-written index card in your collection. Hopefully, over time, your copy will become as well-worn and loved as mine, covered in splatters and stains.

The recipe, as Sybil wrote it:

Banana Bread

2 cups sifted all purpose flour, 1 tsp soda, 1 tsp salt
1/2 cup shortening, 1 cup sugar
2 eggs
1 cup mashed ripe bananas
1 tbl (tablespoon) vinegar plus milk to make 1/2 cup
Broken pecans or walnuts (optional)

Method:

Sift together flour, soda, and salt. Cream shortening, blend in sugar. Add eggs one at a time and beat until fluffy. Add flour mixture alternately with bananas and liquid, beating after each addition. Turn into greased bread tin and bake 60 minutes to 70 minutes or until done at 350. Remove from pan and cool several hours or overnight before slicing. Nuts can be added last.

One Little Word 2014: Determination

I’ve talked about One Little Word here before, about this time last year. A trend in the scrapbooking world started by Ali Edwards, One Little Word (or OLW) has branched out far past the initial One Little Word year, the initial project.

Last year, I’ll remind you, I chose the word Capture. Essentially, by choosing that word, I wanted to learn about that word, and then use that word as an inspiration for the things I would do in 2013. I feel like I accomplished that greatly. When I look back at 2013, I photographed more. I wrote more posts. I scrapbooked more. I printed more photo albums. I lived more to provide more things to capture. I detailed more events and more life happenings both on AND off this blog. I feel good about that.

As 2013 comes to a close, I’m realizing that OLW isn’t necessarily a word that follows you for the year. It’s a word that can follow you for life. I know that, as 2014 opens, I’ll continue to have Capture in my mind. I believe if you practice the One Little Word you select, truly practice it, not just pick it at the beginning of the year, then I think it is something that will be a part of your life long-term. Some words will fade over time, obviously, but others will stick with you.

I knew I wanted to go in a different direction for my One Little Word 2014. While my 2013 word was fairly broad (after all, capture can mean more than just photograph or write), I wanted something that would cover all of my goals for 2014. And, well, I have several of them. I have some Bible studies I’m going to be working on, focusing on in 2014, and those were very influential in selecting my OLW.

I chose Determination.

I was recently working on a lesson out of my Made To Crave Bible Study I’m working on, a study from Lysa TerKeurst of Proverbs31 ministries. She talked about determination, not self-determination, but true Holy Spirit determination that happens when you get God’s support in your goals and lean on him. Her comment was mostly motivated about food struggles, talking about how she would use cravings as an opportunity to pray instead of eat. However, I think they reply to anything you’re setting your mind to. If it’s something that is pure and holy, and if you’re using it as an opportunity to pray, and asking the Holy Spirit to give you determination, then you can achieve it. I have no doubt in my mind about it. It may still take a lot of time and effort (prayer alone won’t make you drop 6 pant sizes… healthy eating and exercise in conjunction with prayer can, though).

I found myself having so many goals for 2014. I don’t want to use the word resolutions, because resolutions are rarely kept. Goals are something that have a specific, measurable outcome and a time frame. Some things, of course, are easier to measure than others, but they’ll all be something where I can see changes in my life, and the others around me should be able to see them, too, if I’m doing it right.

For 2014, I need Holy Spirit determination to help me, and I’m determined to achieve my goals when it comes to losing weight, being less moody, dedicating more quality time in my relationships, with my son, my boyfriend, and my parents and brother. I am also determined to be more organized, both in my home and in my work. While I won’t share my full, specific, measurable goals in this post, that gives you an idea of the things I’m hoping to achieve this year.

All of these things take Determination. I can’t think of a better umbrella word for them– determination is what’s needed to make it happen. True Holy Spirit determination, that is.
