Tuscan Sausage and Bean Soup

I am a huge fan of soup. I think that a good, hearty soup can make any day better, especially a frigid one like so many of us are experiencing lately, with snow covering most of the nation.

When it comes to soup, I have a lot of old standbys. My mom’s killer chicken noodle soup that everyone raves about, an easy taco soup we can’t get enough of, chili… it’s all good. But I also like adding a new flavor into the mix. When we took a good look at our soup recipe collection, it became clear that there was no sausage soup in the mix. That had to change.

The easiest way to fix it was to dig through the old inherited recipe boxes and see what they had to offer. I wasn’t disappointed– I stumbled upon a delicious-sounding Tuscan Sausage and Bean soup recipe that would make a great starting point. With a few tweaks, it has now become a family favorite.

Start out with these ingredients. Because it’s a soup, it’s pretty flexible, so keep that in mind. Don’t have cannellini beans? Throw in great northerns instead. Need to make it stretch? Double the recipe, or add in more beans. But to create the perfect Tuscan Sausage and Bean soup, this is a good starting point.

Start out by cutting your sausage into small pieces and cooking it. I used a mild Italian sausage from Johnsonville. You can, of course, use hot. I won’t judge. Drain it, then set the sausage aside for later.

In the bottom of a large soup pot, melt a stick of butter, then saute half a diced onion and 2 cloves of minced garlic.

Stir in 1/4 cup of flour to create a nice thick base.

Gradually add a can of evaporated milk, a can of chicken broth, and a can of drained diced tomatoes, stirring constantly. You’ll want to continue stirring constantly over medium heat until your mixture comes to a boil, to help thicken the soup. Once it comes to a boil, add in two cans of cannellini beans (don’t drain them!), and your sausage.

Heat the soup a bit longer, and then serve it.

This is a really hearty soup, and it will fill you up and warm you up, which are the two best features of a good winter soup.

On a snowy day, this soup is totally where it’s at. With the rich sausage flavor, the hearty broth, and the delicious flavor that needs no added salt or pepper makes it truly worth making on these cold winter nights.

Love When Oceans Rise (With free printable)

With today being Valentine’s day, a lot of us are naturally thinking about love. It’s tossed towards us through commercials and greeting cards, mushy love songs and that cubicle neighbor getting a flower delivery.

We see images of an idealized love thrown at us from every angle on Valentine’s day. And I think, to some degree, we all have that craving for love, to be wooed or romanced on Valentine’s day. Going to a Christian college, there were some girls (while they were hardly the majority, of course) who were devastated if they didn’t get a proposal from the boy they met at the fall back to school events by V-Day. There’s this underlying promise in the air– every kiss begins with Kay, he went to Jared, your friends in the diamond business, all of those slogans give you this fluttery feeling that love is represented by gifts.

And yes, some people do express their love through giving gifts. Gary Chapman talks about giving and receiving gifts as being one of the five love languages in his book, The Five Love Languages. However, I must insist that Valentine’s Day? Well, it really IS just a trick of the greeting card industry.

I’m not saying that to be Anti-Valentine’s Day. On the contrary– I love V-Day. I love getting swept up in the pinks and reds and, duh, the chocolate. And, even when I am flying solo on Valentine’s Day, I love being able to share my love with the people I love, like my son or other family. I love that we have a whole day to celebrate LOVE.

But honestly… how many of us, on Valentine’s Day, consider the fact that love is way more than chocolate and greeting cards and fresh flowers and glittery diamonds? How many of us stop to think about what Love… L-o-v-e with a capital L… really means, what it’s truly all about? Or are we just all caught up in the kissy-faced commercials and crooning of love songs to notice that love is about so much more?

You see, the love that we know, the love we express to others, it’s amazing. But it’s conditional. We place conditions and limits on our love. If we didn’t, parents wouldn’t stop speaking to their kids, kids wouldn’t run away from home, relationships wouldn’t split, and boys wouldn’t have cooties. But, in a broken world, we see those things on a regular basis. It’s all over the news, when heartbreak goes wrong and people get hurt– emotionally, or even physically.

We don’t mean to put limits on our love, but there is always this innate sense that we can only take so much before we just… can’t.

God doesn’t work like that. His love, it’s unconditional. It means that no matter what you do, God loves you. He may not like or support your behavior, and He will still recognize your sins, but God gave the ultimate sacrifice, Jesus dying on the cross, because God loves us so unconditionally, so completely, so wholly, that he wanted to make sure that even WE couldn’t keep ourselves apart from God unless we willingly chose to.

God gave us this blanket that covers our sins, that says we can overcome that– he rescues us from our own flaws, our own acts of defiance, and gives us this love that is without fail and is unending. And he doesn’t want us to choose to be separate from him. He wants us to choose to be with him, to choose a life spent serving him, worshiping him, and loving him.

God’s love is unfailing. It is. As humans, we have failing love all the time. While our love may be unconditional to some degree, we have our moments. As a mom, I have those “failed love” moments. I have those times where, on the 5th time of the day that I’ve asked Zach “PLEASE get off of the piano and settle down!” that I get snippy with him and just exclaim “Darn it, Zach, if you won’t listen, you’re going to be in trouble.” I reach my frustration point, my “limit” so to speak, and, while I still love Zach, my frustration fails him in that respect. God is so much different than that… even when you or I have stood on the piano 10 times that day, have stood there and dared God to just say “UGH! I’m leaving the room and counting to ten if you can’t behave!” …he just keeps on holding us.

There’s this old saying that says “If you’re feeling distant from God, stop and think… who moved?” I’ll give you a hint… God didn’t. He’s everywhere. If you’re distant from him, YOU moved.

And that’s where God’s love is unfailing. I think that’s why Psalms 13:5 speaks to me so much. It says “But I will trust in your unfailing love. I will rejoice because you have rescued me.”

…think about that for a second. “I will trust in your unfailing love,” it says, “I will rejoice. Because you have rescued me.

Wow.

I mean, can you say much more here than just… wow?

God loves us so completely, so wholly, that his love is unfailing. It doesn’t fail. I know I may sound redundant here, but, to some degree, to unpack this verse, you have to be. God doesn’t fail. He doesn’t. Instead, he takes you, screaming toddler you, standing on the piano, shaking your fists, screaming at the top of your lungs, and he says “Come here. Give me a hug. I’m going to rescue you.”

When Zach, my son, crawls up on the piano, he climbs all the way up, unblinking, and then gets to the top and thinks “Whoa. This is really high. I’m kind of freaking out here.” I think we’re the same way. While our piano is metaphorical (or, hey, y’know, maybe you’re literally climbing onto a piano. I respect that– your choice there, dude), we put ourselves in these situations, these really scary places.

And then we think… “Oh. Crud. How do I get down from here?”

And God… God rescues me. He rescues you.

Listen to this song from Hillsong United. I think it really speaks to this verse, to Psalms 13:5, how God has this unfailing love, and he rescues us.

At one point, the writer of the song says “Your grace abounds in deepest waters. Your sovereign hand will be my guide. Where feet may fail and fear surrounds me, you’ve never failed, and you won’t start now.”

God NEVER fails. And if we call upon his name, if we keep our eyes above the waves, we’re going to be able to find that rest in him, that love, unconditional.

 

We just have to accept it.

Wacky Eggless Microwave Mug Cakes

I love cake. If you’ve been reading here awhile, that’s no surprise to you– I post about cake a LOT. But sometimes, a full cake is just way too much to have around the house, which is why I love an easy mug cake.

So, when Wacky Apple sent me a great package of their products to try out, I knew that those applesauce containers would be perfect for mug cakes! And, after seeing the yummy applesauce flavors I had available, I knew I had to make more than one– I just couldn’t decide.

I started off with the Cinnamon applesauce. They’re so much you can do with a cinnamon flavor, and I thought a Carrot cake would compliment the flavors well.

To make an eggless microwave mug carrot cake, you’ll want to start out with frosting. After all, what’s a carrot cake without a delicious cream cheese frosting? This one is so easy for a single serving!

Mix 1 1/2 Tablespoons of softened cream cheese with 4 Tablespoons powdered sugar until it’s smooth, then pop it in the fridge while you make your cake.

For the cake, in a small bowl, mix 6 Tablespoons all purpose flour, 2 Tablespoons brown sugar, 1/4 teaspoon baking powder, 1/4 salt, 1/8 teaspoon cinnamon, and 1/8 teaspoon nutmeg.

In your microwave-safe mug, mix 6 Tablespoons milk, 1/4 teaspoon of vanilla, and a grated baby carrot.

Add in 2 Tablespoons of Wacky Apple Cinnamon Applesauce. This will add a nice underlying cinnamon flavor to the carrot cake. Slowly add in the flour mixture.

If you’d like to, add in a Tablespoon of pecans (I like the cookie pieces) and some chopped raisins. Microwave on high for 2 to 2 1/2 minutes, then let stand for 30 seconds before removing and adding frosting.

The great thing about Wacky Apple Applesauce cups is that there’s about enough applesauce for 2 mug cakes per applesauce cup! If you’re not familiar with Wacky Apple, they’re a great Colorado based company that produces organic apple snacks, including juice, applesauce, and flat fruits fruit leather. The products are all made from organic apples, containing no pesticides, and the products contain no added water or sugar.

Another great applesauce flavor that Wacky Apple makes is a Mango Applesauce. I just knew it would be perfect for a tropical-inspired cake!

Start by mixing 6 Tablespoons of all purpose flour, 2 Tablespoons of granulated sugar, 1/4 teaspoon of baking powder, and 1/4 teaspoon of salt in a small bowl.

In your microwave safe mug, stir together 6 Tablespoons milk, 2 Tablespoons of Wacky Apple Mango Applesauce, 1/4 teaspoon of Vanilla extract, and 1 Tablespoon grated coconut.

Add in a Tablespoon of crushed or fresh pineapple, then microwave for 2 1/2 minutes. Let sit in the microwave for another 30 seconds before topping with whipped cream and a cherry.

I decided to finish my mug cake trio with a delicious rich chocolate mug cake.

Start with 4 Tablespoons all purpose flour, 3 Tablespoons granulated sugar, 2 Tablespoons cocoa, and 1/4 teaspoon baking powder in a microwave safe mug.

Stir in 3 Tablespoons milk, 3 Tablespoons of Wacky Apple Golden Applesauce, and 1/4 teaspoon of vanilla extract. Finish with 1 Tablespoon of white chocolate chips. The golden applesauce adds great moisture to the cake without overpowering the chocolate flavor of it.

Microwave for 2 1/2 minutes, let stand for 30 seconds, and then finish with whipped cream and a drizzle of chocolate syrup.

These cakes are honestly really good plain, without the frosting or whipped topping… but who can resist the fun toppings, right?

Oh my… now THAT’s a mug cake. Or three.

So you’ve seen how easy eggless mug cakes are with the use of delicious applesauce… but let’s talk about Wacky Apple a little more.

If you’re a fan of fruit leather sort of things, you’ll love these flat fruits. I seriously don’t know who loves them more– me or my son. They’re actually a really wholesome snack and they’re really satisfying when you want something sweet. I love them, and they’re the perfect size for stashing in a purse to take to church for the kiddos, packing in a lunch box with a sticky note of affection, or bringing to the park with you.

Of course, I already shared the delicious applesauces with you.

And their juice? Let’s just say that not only does it taste good, but it’s REAL juice. And that’s really important when you’re giving kids juice! It should have real fruit in it, and Wacky Apple uses real fruit, not just artificial flavors and added sugar.

Medicine Tips for Toddlers

Ever struggle to get your kid to take medicine? Never fear, because these tricks will make even the pickiest of children take their medicine with no trouble! #parenting #lifehack #momhack

Being sick sucks. It especially sucks when a little one is sick, since they can’t always express their feelings or understand why they just feel awful. Zach recently had a teething-related bug, the kind you tend to get when you’re chewing on everything because you just can’t get those molars in fast enough.

While recent studies have suggested that it’s okay for kids to run fevers to a certain degree, since it helps kill whatever bug is ailing them, it’s also widely accepted to give your toddler some meds if they’re lethargic and having other issues, like not eating.

However, when your kiddo is sick, it’s sometimes hard to get them to take their medicine. It seemed with Zach that I’d pour the liquid in his mouth, and he’d spit it back out. I’d try to make sure he got the full dose, sweeping the liquid back into his mouth, but he’d resist so much I’d start fearing he might choke on tears and Tylenol. I would give up, frustrated, and he’d still be miserable after not getting even a few drops into his system.

Finally, something had to give, and I started exploring ideas to get him to take his medicine more easily.

For liquid, a dropper often works better than a spoon or cup. You can squirt the medicine into their cheek near the back of their mouth, and it’ll slide right down. Be careful not to stick the dropper straight back– they can wiggle and end up activating their gag reflex, and you’ll wind up with a lot more of a mess on your hands. By squeezing it into the pocket of their cheek, it goes down without too much taste even hitting their tongue. With that said, some older kids may really enjoy the process of being a big helper and drinking the medicine straight out of the small cup that comes with many medications instead of a dropper. If you go this route, give supervision and have something on hand for them to chase it with (like juice or water).

Mix it with fruit juice if you need to– just a little bit of juice with a similarly flavored medicine (like sticking with grape juice for grape medicine) will help mask the taste as it goes down.

Have water on hand, or another favorite drink, for after the dose is given. The easiest way to quell arguments of nasty medicine taste is to make sure kids can flush it out immediately after taking the medicine with a favorite juice or water.

Switch to chewables, if your child is old enough. I thought you had to wait until 4 for chewables, but I finally discovered that there are some name and off-brand chewables on the market for children as young as two years old. While you should never bill it as being candy-like, the little tablets are quite similar to Smarties, and allow kids a little less fear than a nasty syrup.

Hide the pill in some applesauce or pudding. If your child is still resisting when it comes to tablets, tuck it into some applesauce or pudding and have them eat it that way– they’ll be less likely to taste it as it goes down.

Ask for a different flavor. Some pharmacies can add or change the taste of certain prescription liquids if requested, or can point you in the direction of a different flavor when buying over-the-counter medicine. Most pharmacists are happy to help you find a flavor that works for your child.

With the tips listed above, your child might even become excited about taking their medicine. Because of this, you’ll want to be sure all of your medicine is out of reach and locked away to prevent over-medicating. Also be sure to check dosage instructions with your pharmacist, or consult a website like Dr. Sears’ website if you’ve lost the dosage instructions for an over-the-counter medicine. One of the biggest hospitalization causes for kids is over-medication or accidental overdose, so use caution when dosing and make sure that all medicine is put away where your child cannot access it easily.

As always, I am not a doctor. Be sure to consult with a doctor or pharmacist before trying the tips listed in this article. If you do have a concern that your child accidentally ingested medicine, contact poison control and get them to the nearest emergency room immediately. 

Waldorf-Astoria Red Velvet Cake

Ah, Red Velvet Cake… it’s easily one of the prettiest cakes out there, whether you’re a fan of the taste or not. When I stumbled upon a red velvet cake recipe in my inherited recipe, I just knew I had to try it.

Why? Because the recipe claimed, on good authority, that it was THE Waldorf Astoria Red Velvet Cake with Ermine Icing… oh, dear sweet, sweet goodness.

But it turns out that the Waldorf Astoria Red Velvet Cake isn’t quite the same as most people know Red Velvet Cake. While the original recipe was a Depression-era recipe, it turns out that it died in popularity until a little movie called “Steel Magnolias.” Yeah, yeah, polish off that box of Kleenex while watching the film again, and notice the red velvet armadillo groom’s cake.

You’ll start making this famous cake by creaming together one softened stick of butter and 1 1/2 cups of sugar.

Following the Steel Magnolias related boost in popularity, the cake got more attention when the beautiful “chicken or fish” Jessica Simpson chose it has her wedding cake when she married Nick Lachey, the hottie from 98 Degrees.

Add in 2 eggs and a teaspoon of vanilla extract, stirring until it’s fully combined. Go ahead and add a lot of food coloring at this stage. I used half of a small container of Wilton No Taste Red, but you can use any food coloring you see fit.

When the cupcake trend became widespread and there was a cupcake shop opening on every corner, pretty much every one decided to feature a Red Velvet Cupcake. Why? Because it’s so darn pretty, that’s why! Heck, even Emma Stone, of Easy A, Marmaduke, and Crazy Stupid Love fame, once said “You’re a human being, and life is wonderful, so eat the d*mn red velvet cupcake.”

In a separate bowl, sift 2 1/2 cups of pre-sifted flour, 2 Tablespoons of cocoa, and 1 teaspoon of salt together.

Rumor had it that quite some time ago, a diner at the Waldor Astoria’s hotel was so in love with their Red Velvet cake that she requested the recipe. The hotel refused, but she insisted, asking if she could purchase the recipe instead. The waitress replied, “Of course! It’ll be three fifty.” The diner accepted, but was later mailed a bill… for $350.00! (In a time when that would buy 3 months worth of groceries or more for a family of four). She tried to fight it, but her lawyer insisted since she had received the recipe, she had to pay. To get even with the Waldorf Astoria by spreading the recipe far and wide to make sure that everyone had a copy of the recipe and wouldn’t have to pay like she did.

Grab your egg and sugar mixture and add in parts of the flour mixture and parts of 1 Cup buttermilk alternately until all of the flour and all of the buttermilk are added in. At the very end, add in a Tablespoon of vinegar and a teaspoon of baking powder. You know how when you make a volcano for the science fair, and you get that bubbly eruption when you mix vinegar and baking powder? That’s the same thing happening in this cake to give it that perfect velvety texture.

You want to know a secret about that Waldorf Astoria story? The one about how everyone came to know how to make red velvet cake? Yeah, so… it doesn’t happen to be true. The truth of the matter is, when the Depression hit and people had to cut back on unnecessary things, including food coloring and extracts.

Divide your red batter into three greased 8 inch pans. If you’re the type of person who butters and flours, you can substitute a light dusting of cocoa instead to erase that white layer from your cake. This will give you your layers. You’ll bake these at 350 degrees for 30 minutes, or until the cake tests done. Let these cool on a wire rack.

The truth of the matter about how Red Velvet Cake became popular in households in the Depression era is that it was actually a very clever marketing ploy. When people stopped buying coloring and extracts, it really sucked for the people at the Adams Extract Company, who, as the name implies, made their living from selling extracts and colorings. To try and gain back some income, the Adams Extract Company revamped an old recipe to make sure it used their red food coloring– a lot of it!

You see, Red Velvet Cake had been around, but the hue was very subtle, created by the way vinegar, cocoa, and buttermilk reacted in the cake, giving it a soft scarlet tint. Adams decided to pack a punch and make an impact AND make some money. When they revamped the cake, they added their own Red Velvet Coloring… TWO BOTTLES of it.

Now that Red Velvet Cake has become a “thing” again, with celebrity endorsements and cupcakery features galore, you see it slathered with Cream Cheese Icing. But no, no no, that’s not how Red Velvet Cake began. A real, Waldorf-Astoria style, Adams Extract Company Red Velvet Cake features something called an Ermine Frosting.

Ermine frosting is a silky cooked frosting that starts by mixing 1/4 cup of flour and 1 cup of milk in a saucepan over low heat. You want to stir it until it begins to thicken, basically making a roux. You’ll want to continue stirring constantly until you get a pudding-like consistency.

When it looks like this, you’re getting really close.

And when it looks like this, your roux is done, then it’s time to get started on part 2 of your frosting.

In a separate bowl, while your roux cools, you’ll want to beat 1 cup shortening and 1 cup sugar until it’s fluffy, like this, then add in a teaspoon of vanilla extract.

Once your roux has cooled fully, beat it into the shortening mixture until the frosting is silky. This frosting cannot be overbeat– it’s just going to keep getting a silky texture! It won’t curdle like a buttercream frosting.

You can take the cooled cakes and layer them with the Ermine frosting, giving it a generous coat, then dirty ice the entire cake. Dirty icing just means to put a really quick coating of frosting on the cake, covering it, before you cover it with other decor. You don’t have to smooth it out. For the technique I’m showing you today, though, you’ll want to be sure the top of your cake is smooth. The sides can be rough like mine.

The frosting technique I’m going to show you today is a stunning ruffled technique that takes very little effort. Take a piping bag and put a large round tip in. I used a Wilton 2A.

Holding the piping bag at a 90 degree angle to the cake side, you’ll pipe dots of frosting vertically down the cake.

Squeeze and release, keeping the dots as uniform as possible.

Grab a spoon or an angled spatula (again, I’m a big fan of Wilton’s small angled spatula) and drag the dot sideways. Repeat this all the way down the dot row you piped.

Pipe a second row of dots on top of the tail of your first row, then flatten those, the same way you did the first, working all the way around the cake. Finish the cake by piping a row of small dots around the top edge of the cake.

Your finished cake will be a showstopper, and sure to woo anyone who sees or tastes it.

One bite of that velvety cake and that silky satin frosting, and you’ll be in heaven. I promise.

You see, Adams Extract Company knew what they were doing when they created this cake. It was so popular, so beautiful, and offered on free recipe cards at the grocery store that everyone in that era was making red velvet cake when they could afford to. And with a tagline like “The cake of a wife time,” it was, well, rather popular back in the day.

I’m not sure that Adams Extract Company realized that, in 2014, this cake would still be all the rage. Luckily, it was a cake that saved them through the Great Depression. In fact, it’s still around today, over 125 years after it got it’s start.

Now that you know how to make Red Velvet Cake and Ermine Icing, well, the sky is the limit. Adding blue food coloring will get you a beautiful Blue Suede Cake, which you could make in honor of the King’s hip wiggle, or you could go all Cupcake Wars and make your very own Red Velvet Cupcake. Cake Balls also work.

Waldorf-Astoria Red Velvet Cake
1/2 C Butter or Shortening
1 1/2 C sugar
2 eggs
2 ounces red food coloring
1 teaspoon vanilla
2 1/2 C sifted flour
1 tsp salt
2 Tbsp cocoa
1 cup buttermilk
1 Tbsp vinegar

Cream butter and sugar, add eggs and beat well. Add coloring and vanilla. Sift flour, salt, and cocoa together. Add this and buttermilk alternately to creamed mixture, beating well after each addition. Stir in vinegar and baking soda last. Divide batter among three greased and floured 8 inch cake pans. Bake 30 minutes at 350 or until cake tests done. Fill and top with Ermine Frosting.

Ermine Frosting
1 C Milk
1/4 C flour
1 C shortening
1 C sugar
1 tsp vanilla

Stir milk and flour together in medium saucepan. Cook over low heat to pudding consistency. Set aside to cool. Beat shortening and sugar with electric mixer at high speed until mixture is light and fluffy. Add cooled milk mixture with vanilla. Continue beating– you cannot overbeat this!– until the frosting is silky. Spread between layers and on top of cooled cake.

It didn’t take me long at all, minutes even, to realize I was never going to be a perfect parent. In fact, I honestly realized that while I was pregnant. No matter how hard I might try, I’d never be a perfect parent.

When I brought up my worry, as a perfectionist, that I’d never be a perfect parent, I was greeted with wisdom by people who had been there. My mom, my grandma, my friends… they all came back with the same resounding concept. I was right– I’d never be a perfect parent. But that didn’t mean I couldn’t be a praying parent.

By spending time in prayer for my child, I could actually become a better parent for him than if I was a perfect parent.

But sometimes, it can be hard to think of how to pray for your child. I mean, you have all of these hopes and dreams and thoughts for your child, as a mom, before your son or daughter is even born. Sometimes, you even have this in your mind before they’re conceived.

I struggled to put my prayers into words, and I honestly sometimes didn’t even use words– I believe God understands my petitions even when my words can’t put the thoughts I have into coherent prayers.

One of the first prayers I had for my son was a prayer of Salvation. I knew that I wanted my son to grow up and have a relationship with God, so I wanted to make sure that he knew God personally, and had dedicated his life to Christ. I wanted to pray that he would find Salvation.

I prayed for my son to have great joy. I wanted to know that he was not just happy, but joyful. I prayed also that God would make ME a more joyful person and help instill that joy in his life, both by the way I lived, and through the examples set for him by myself and those in his life. I wanted him to experience happiness, of course, but I also thought that joy, true Holy Spirit joy, transcended that, and I prayed that upon him.

I prayed that my son would have a Servant heart, that he would learn to serve others and be willing to get down and wash someone’s feet, or any other service that he could provide. I wanted him to reach out and help people, and find a passion in that. Essentially, I prayed that my son would get a lot of traits from my mother, who has the biggest servant hearts of anyone I know. I wanted my son to know that serving others is one of the most important things you can do.

I prayed for my son’s safety. Of course, his safety was paramount to me. With all of the crazy news about mall shootings and terrorism and even just basic things like drunk drivers or plane crashes, I worried a lot about Zach’s safety. I realized, though, that God says not to worry, but instead, to pray. There’s no need to have anxiety about things when we have prayer (easier said than done for me and my panic attacks, but I knew prayer was the right solution). So I did, I prayed for my son’s safety, for him to be guarded from harm. I prayed he would be protected and kept from harm.

I prayed for my son’s wisdom, that he would not just be a smart child with a thirst for learning, but that he would be wise. I prayed that he would have the wisdom to think for himself, to discern right from wrong, and make wise, Godly choices. I didn’t pray necessarily for my son’s intelligence, but for wisdom. I knew that being book smart could help him in life, but being wise, having that true wisdom, would help him for sure.

When my son started to grow, I saw that he was one self-confident kid with a little attitude.
I prayed for humility, that, even in his self-confidence, he would be humble and speak with kindness. I didn’t want him to become cocky, or lose that humility when speaking to authority figures or even peers. I wanted his heart to be pure and humble, with his servant heart and gentle spirit.

I prayed for strength. No, not the “I can lift two elephants” kind of strength, but the kind of strength that comes from the heart. I wanted him to be strong in tough times, to know that, even though times can be tough, or you can cry or be upset over circumstances, that you persevere, you continue on, and your strength helps carry you. I also prayed for a strength of spirit, one that would allow him to resist temptation that I know will face him in life. I prayed for the strength to say no to things he knew were not right, and for the strength to stand for what is right, even when it’s hard. I prayed for strength to get through hard circumstances, and strength to resist temptation, both from his peers and directly from evil he may encounter in life.

Of course, there are many, many ways you can pray for your child. These seven are just a start, a jumping off point to consider ways to pray.

Whether your child is a grown adult, or still not even a blip on the radar, or maybe somewhere in between, praying for your child is important. You’ll never be perfect… I’ll go ahead and be the bad guy and break that news to you now. But you CAN be a praying parent, and that’s what really matters.

How Much Water Is In Snow?

As Jeffrey came in from shoveling, he peeled his extra layers of clothing off, shedding snow all over the floor. Before he had time to make any hot cocoa, the snow had melted into water puddles in the floor. Very large water puddles.

We got curious. If something as simple as snow attached to clothing could create massive puddles on the floor, how much water could you get from several inches of snow? So, we set out to find out. After all, learning doesn’t have to stop because it’s a snow day!

The experiment started when Jeffrey brought in a big pot of snow.

After measuring, we realized it was 9 inches of snow. We had hoped to do ten, but our largest pot was 9 inches deep, so no rounded off, even numbers for us. We made a note of the starting number of inches of snow.

Then, we played the waiting game as the snow melted. This would have been a great time to make a hypothesis about how many inches of water we thought we’d have when our 9 inches of snow melted.

A lot of this discusses basic science principals. Snow is, at it’s core, a solid, like ice. As dust gets kicked up into clouds, water forms around that particle, then hardens in the cold, creating snow.

In the same way, ice is a solid, and when it melts, it becomes liquid. Both of these solids have specific properties that a younger scientist can take note of. If you want to extend the activity, consider taking the temperature of the snow versus the temperature of the melted snow (water). You’ll be able to make more observations about what happens when snow melts.

For our purposes (and older scientist), we just wanted to have a core understanding of how much water you’d get from 9 inches of snow. Because Jeffrey has been really interested in survival skills lately, he has been learning about how to find water when there isn’t water available. If you’re in the snow, you obviously have a lot of water available, and, after boiling or purifying, you’d be able to have drinkable water if you were stranded in the snow. Because water is one of the most necessary things for sustaining life, more than food, it’s a really important thing to figure out how much water you have access to if you can find a small unmelted snow patch somewhere.

In the same pot that held 9 inches of snow, after melting, there was only…

1 inch!

That means melted snow (water) took up only 1/9th of the space that the snow took up. But really, how much water came from all of that snow? For example, if Jeffrey was out in the wilderness, away from all sources of water, aside from one side of a hillside that hadn’t totally melted yet, and had this pot with him, and scooped up that 9 inches of snow…. how much water would he have gotten?

This specific pot held 5 2/3 cups of water from the 9 inches of snow that was originally put in it. Of course, we could go into cubic inches and discuss how my pot might have a different diameter than your pot, leaving a different amount of water than what we got. Those are experiments you can consider at home depending on the age and grade level of your kids. The awesome thing about this experiment is that you can talk about physical properties of substances– like how snow is a solid and can turn into a liquid when it reaches it’s melting point, or talk about volume, or consider a wide variety of scientific methods. We chose to tie our experiment into survival basics, and realized that, provided Jeffrey could find snow and a pot this exact size in the wilderness, he’d be able to have some water for survival– just over 5 cups after boiling!

The trick to getting kids to enjoy science, or really, any subject, is to find their interest and explore topics relating to that interest with them. Because Jeffrey’s passion is survival skills, it paves the way for a lot of great science experiments like this one. Plus, it’s the perfect way for sneaking in a little bit of learning on a snow day when no one can get outside.

Valentine’s Popsicle Stick Puzzle (With Free Printable!)

One of my favorite things to do is to visit the craft store. There’s always so much creativity in store, so many blank canvases and exciting things to try. I can’t resist buying something new to create. When I stumbled upon Jumbo Craft Sticks, I realized they’d be an incredible blank canvas to work with, but… I didn’t know for what.

Then, I remembered seeing some fun projects using popsicle sticks as puzzles, in addition to ideas where you could build with them, make puppets with them, and more.

This craft is so simple– all you need is an 8×10 image, 10 jumbo craft sticks, some glue, and some scissors. In this post, I’m providing you with a printable that is perfect for Valentine’s Day, but using a copy of a family photo or any picture your child loves is another great option.

Start by trimming the excess paper off of the printable or off of your image using a paper cutter or scissors. This is a great project for kids who are old enough to manage scissors themselves. I printed mine on a thick cardstock, but a photo paper will also work.

Spread a thin, even layer of glue across the back of the paper. This is definitely a task that even young kids can do!

Arrange the jumbo craft sticks on the glue, making sure to leave a small gap to allow for your cutting device (scissors, x-acto knife, etc) to cut between them when it’s dry. Let this dry for several hours (or overnight, if you can wait! The longer, the better).

After your glue is dry, cut the craft sticks apart carefully. An x-acto knife will leave you with fewer touch-ups later, but scissors work in a pinch, too. If you notice any loose edges, of course, they can be glued back down.

You can also use a nail file or some fine-grain sandpaper to soften the slightly rugged edges if you have jagged stuff like I do.

Now, let your kiddo play and assemble the puzzle again and again! This makes a great quiet game for church, a fun snowy day craft to create and then play with together.

You can also create multiple copies, tie them up with pretty bakers twine, and hand them out to friends or as class Valentines! It’s a fun twist on a typical card or sweet treat. If you’re using cardstock, your child can even personalize it with a message by writing directly on the image/printable!

I’m pretty much always on the hunt for awesome books to add to my son’s bookshelf each season, to the point that our bookshelves are overflowing! It makes sense that, in the season of love, it would be nice to include kids in the gifting, and books are a great option there! Here are my top picks for February!

If I Could Keep You Little by Marianne Richmond

When I first saw this book in Walmart, I decided to peek through it. That peek turned into me reading the entire thing, and crying right there in the middle of the store. No, not some discreet, teary-eyed cry. This was one of those “tears streaming down my face, ugly cry where I’m practically choking on my tears” kind of crying. I don’t know if it was just knowing my son was growing up, or seeing the changes he goes through every day, but this book hit me hard.

It seems simple enough… “If I could keep you little, I’d kiss your cuts and scrapes. But then, I’d miss you learning from your own mistakes.” Essentially, the book is saying, if I could keep you little, I’d be able to take care of you, and make sure you have everything you need, but at the same time, I’d be missing out on the child you’re becoming, on watching you grow into something special.

And that, well, it’s worth a really good cry. I dare you to get through the entire book without at least welling up with a few tears.

Happy Valentine’s Day, Mouse! by Laura Joffe Numeroff

On a less serious note, Happy Valentine’s Day, Mouse! features all of the best characters from the If You Give a Mouse a Cookie series, and talks about Mouse creating a special valentine for each of his friends. I think the book is great in that Mouse lovingly considers each of his friends and what he likes about them as he creates their valentine. That is a very special thing to teach kids, making this book a perfect start for a conversation about thoughtfulness, and also helping them more clearly share what they like about the people they care about.

Of course, it’s lit with fun illustrations and familiar characters, making it a staple in any home that loves the If You Give a Mouse a Cookie books.

Duck and Goose: Goose Needs a Hug by Tad Hills 

I wasn’t familiar with the Duck and Goose stories until just a year or so ago when I picked up “Duck and Goose: It’s Time for Christmas.” My son and I had so many giggles over lines like “Goose! It is not time for making a SnowGoose!” that it quickly became a favorite during the winter time. While the Goose Needs a Hug installment isn’t necessarily specifically Valentine’s themed, it does show an important way to express caring for individuals through hugs. A simple hug can cheer up someone’s day and take them from sad to glad in just one brief moment of physical touch; if that wasn’t so, then Free Hugs campaigns wouldn’t be so popular! Goose Needs a Hug is a heartwarming tale for those who already love Duck and Goose, but it’s also a great introduction to Duck and Goose books if you’re not already familiar with them.

I feel the need to include this one because Little Critter was a staple of my childhood. Truly, it wouldn’t have been a childhood for me without spending countless hours reading and re-reading, searching for that little spider hidden on the pages. I loved devouring the Little Critter books, and of course, this cute tale is no exception. It’s mushy-gushy in the right places, with just a touch of that Little Critter snark everyone knows and loves, and it’s destined to become a classic, especially if you’re a parent who loved Mercer Mayer as a child.

The Day It Rained Hearts by Felicia Bond

The name of this author may look familiar to some, but even if the name doesn’t, a quick flip through the pages will refresh your memory. Felicia Bond is the well-loved illustrator of the If You Give a Mouse a Cookie books. These cute drawings are perfect, and the storyline is just so wholesome and fun. It starts with a girl seeing hearts begin falling from the sky like raindrops. As she catches them, she realizes each one is unique… and that each would make a great valentine for one of her friends! A cute book with darling illustrations, it’s one that will be read again and again, especially by families with younger children.

I Loathe You by David Slonim

I think we can all admit that sometimes, the “I love you THIS much” genre gets a bit mushy gushy. I mean, don’t get me wrong, I love a good, sweet, overly mushy book– if I didn’t, I wouldn’t be crying over books in the middle of Walmart, would I? But this book has it right when it comes to providing that amazing unconditional love… without really going the mushy-love route. As two monsters talk and get so disgustingly silly with their loathing for one another, you quickly realize that this is a tale of love, albeit a different kind of love, expressed in an atypical way. This book is especially good for the kids who wipe away kisses saying “YUCK!” like my own son. It’s perfect in a secretly-loving, but extra-awesome way.

Ten Little Zombies: A Love Story by Andy Rash

Okay, so, I have to warn you here, this isn’t exactly a children’s book. Or, well, it is, but it kind of depends on the type of kid you have. You won’t see anything worse than an episode of CSI in here, but there are bits and pieces about zombie dismemberment, including the use of chainsaws, acid, and other horrifying stuff. It even has a special twist ending! But really, for an older kid, or a kid who has been exposed to their fair share of zombies, you’ll find tons of giggles in this silly counting book. It has a little bit of everything– humor, grossness, and even some love. It’s a cute story, and the illustrations are rudimentary, so it isn’t the stuff of nightmares so much as the stuff of “Eww! Dead zombie blood!” I think it’s well worth reading, especially if you’re an off-beat parent.

Cherry Nut Cake

I’m a huge fan of cherries. And also nuts and coconut. That’s why, when I found this recipe lurking in my box of inherited recipes, I knew I’d have to try it. I mean, I haven’t tried an inherited recipe I didn’t love, so this one was very likely to be great. My family had great taste when they were compiling that recipe box (I mean, I’m sure they still do, but that box is a goldmine of awesome flavor combinations!)

You’ll want to start with everything pictured: a box of Betty Crocker Cherry Chip cake mix, a box of Jello Vanilla Instant Pudding, 4 eggs, 1/2 cup oil, 1 1/4 cup buttermilk, and a cup each of pecans and coconut. I really like the Fisher nuts Cookie Pieces because they’re chopped so finely that you get a little taste of pecan in every bite, but normally chopped nuts will work. Don’t have buttermilk on hand? It’s okay. Put 1 tablespoon and 1 teaspoon of white vinegar in your measuring cup, then pour milk in to make 1 1/4 cups total. Let that sit for about 5 minutes, and you’ll have a very similar flavor.

Start by putting everything except the pecans and the coconut into a bowl, then mixing. You’ll want a fairly large bowl for this, because there is a good amount of volume here. Once mixed, you can leave it as-is, or do what I did and add a few drops of red food coloring for a lovely pink color. I added 5 drops of Americolor Red into my cake batter.

Fold in your nuts and coconut. As you’ll see, there are literally bits of nuts and coconut in every bite of this cake. It’s also an incredibly moist cake!

Pour your batter into a well-greased bundt pan, and put it in the oven. This will bake at 350 degrees for approximately 50 minutes.

The best way to cool this cake is to put it on a wire rack and leave it in the pan for a full hour. It’ll allow the underside of the pan to get air circulation, as well, for a quicker cooling than just setting it on your countertop. You don’t want to turn it out onto a plate yet, because this additional in-pan time helps the cake finish baking and getting perfectly set.

Once the cake has cooled for an hour in the pan, you can flip it carefully onto a plate. Then, take a bit of powdered sugar and sift it over your cake for a light dusted topping. You might want to let the cake wait a bit longer before cutting into it.

Then, you can slice it and serve. I drizzled this plate with a little bit of chocolate syrup and grenadine. Yummy!

This is the perfect cake to take to a pot luck dinner, or serve to your beloved on V-Day. It’s effortless and tastes so good, like you made it from scratch.

 

Because this cake isn’t covered in frosting, but instead lightly dusted, it’s a huge calorie saver, clocking in at only 211 calories per half-inch slice, according to MyFitnessPal. Changing ingredients could change the amount of calories, so always be sure to double-check.
