Oktoberfest is upon us, and that means good food with family, enjoyed as the crisp fall temperatures stay just warm enough to enjoy a meal around the fire pit in a sweater… Oktoberfest is largely overlooked as a great “food holiday”– we all know Thanksgiving and Christmas come with great food, but so does Oktoberfest, and today, I’ve got an easy 3-ingredient Kielbasa Rice dish, plus a traditional German stickbread, to share with you.
Both dishes start out with Hillshire FarmĀ® Polska Kielbasa, which I found in the packaged deli section of my local Walmart store. If you’re planning to just serve your family, you can buy a one-pack of the Polska Kielbasa, but they also have a 3-pack for serving a crowd!

The thing I love about this 3-ingredient Kielbasa Rice meal is that I grew up on it. I remember my mom making it a lot when I was a kid– sometimes because it was so simple (it really does take less than 10 minutes to prepare), and sometimes because it’s just so delicious. You don’t have to use a lot of fancy ingredients to make a dish that is perfect for the family or perfect for a party.
You’ll need 6 cups of uncooked rice, cooked according to package directions (it’ll become about 12 cups of cooked rice), plus a large can of diced tomatoes. While your rice cooks, saute the Polksa Kielbasa pieces until they’re nicely browned.
Add salt and pepper, and if you’d like, a little bit of butter, and then it’s ready to serve– seriously, it’s that easy. It makes about 12 servings, and it’s got perfect flavor for fall or anytime, with hearty Kielbasa, tangy tomatoes, and filling rice.
I grew up on the Kielbasa Rice dinner, but the Stickbread, or Stockbrot, as it’s called in Germany, is one I got from our German exchange student a little later in life. Rather than roasting s’mores over a fire, Germans tend to roast, well… bread dough. This makes for a really delicious treat. And while many Germans will do this during the Easter Fire, in America, we enjoy a good bonfire in the fall, when the air is getting cool and crisp, and the recipe is just as good for Oktoberfest as it is for Easter.
In a small bowl, combine 1 packet of Active Dry Yeast and 1/2 a teaspoon of sugar to feed the yeast. Add to this 1 cup of warm water, and set aside for a few minutes to let the yeast activate.
While you wait for the yeast, take a larger bowl and combine 4 cups of all purpose flour, a teaspoon of salt, and a tablespoon of Olive Oil.
Pour the yeast in, then stir until the dough is thick and well combined.
You can, of course, cook the dough plain over the fire, but I like to shake it up– my two favorite twists are to alternate bread dough and pieces of Kielbasa, or instead, to wrap a marshmallow in bread dough.
Roast these over a fire for about 10 minutes, until the bread is completely cooked. It will puff up nicely when it’s ready to eat, and turn nicely golden brown.
Before serving, you can brush your stickbread with melted butter and season it, if you’d like. For a marshmallow variety, I sprinkle it with cinnamon and sugar, and for the Kielbasa bread, I like to sprinkle it with my favorite savory seasoning, but it’s up to you if you’d like to season it– the meat really does speak for itself here.
By making these two recipes, you’re perfectly ready for a rustic Oktoberfest celebration, without a ton of effort. It’s perfect for celebrating with friends and family, and no one will realize how easy the recipes are.
- 1 pkg active dry yeast
- 1/2 tsp sugar
- 1 cup water
- 4 cups all-purpose flour
- 1 tsp salt
- 3 Tablespoons Olive Oil
- Polska Kielbasa, cut into pieces, and marshmallows, Optional
- Melted butter, optional
- In small bowl, combine sugar, yeast, and warm water.
- In a separate, larger bowl, place flour, salt, and olive oil.
- Mix yeast mixture into the flour mixture, stirring until thick dough forms.
- Cook dough on sticks over a bonfire or fire pit.
- Optionally, wrap dough around Polska Kielbasa or Marshmallows, then brush with butter after cooking.
- To make an easy rice dish to pair with the stickbread, cook 6 cups uncooked rice according to package directions. Stir in 1 large can diced tomatoes, and Hillshire Farm Polska Kielbasa that has been cut into pieces and sauteed until lightly browned. Optionally, add butter, salt, and pepper. Serves 12.
