I have to admit… I really like any excuse to eat cookies for breakfast. Who doesn’t? When my mom was young, she’d sometimes make a batch of no-bake cookies to enjoy for breakfast, and I have to say, it’s not a bad idea… after all, oatmeal, peanut butter, they’re a decent start to getting what you need out of the morning. I love to use the rich milk chocolate flavor, but any flavor will work, so use what you like best! I chose the Carnation Breakfast Essentials® Light Start™ because I like when I can start the day with less calories and sugar, and the Light Start™ options have the same great flavor still!

To the Carnation Breakfast Essentials® Light Start™, you’ll want to add creamy peanut butter (or substitute your favorite nut butter), skim milk (or a milk substitute you enjoy), steel cut oats, honey (or agave nectar), and chia seeds. I love chia seeds because they really pack that punch when it comes to superfood power, and I just love adding them into my smoothie bowls, energy bites, and everything else for their texture, flavor, and benefits!
Once you’ve mixed them, drop them by the tablespoonful onto a baking sheet and pop them in the freezer for half an hour, or until they’ve firmed up a bit. Then enjoy! - 1 packet Carnation Breakfast Essentials Light Starts in Milk Chocolate (or any desired flavor)
- 3 tablespoons peanut butter
- 1 1/2 teaspoons skim milk
- 3-4 tablespoons steel cut oats
- 2 tablespoons honey
- 1 tablespoon chia seeds
- Mix all ingredients.
- Drop mixture by the tablespoonful onto a baking sheet.
- Freeze for at least 30 minutes, and transfer any uneaten portions to an airtight container or bag.
