Mother’s Day is Sunday. Here’s a tip: don’t forget that Mother’s Day is Sunday! If you need a last-minute recipe idea, here’s one that will work really well for you– it’s coffee cake. But without any prep work. It literally takes minutes to prepare, and you bake it in the microwave! Because it’s quick and easy, you’ll be able to make this not just for mother’s day, but any time!
To start, you’ll need some biscuit mix, butter, sour cream, an egg, some sugar (both granulated and brown sugar), and cinnamon.
Start with 2 cups of your biscuit mix, 2 Tablespoons of sugar, 8 ounces of sour cream, and an egg. Stir this mixture together until well combined.
Your mixture will be incredibly thick and lumpy– that’s okay!
Spread half of the biscuit mixture into a greased, microwave-safe baking dish.
In a separate bowl, combine 1/4 cup of your biscuit powdered mix, 1/4 cup of brown sugar, and 1/8 cup of butter.
Sprinkle this over your batter, and then add nuts, if you’d like. I used pecan pieces, but walnuts and almonds also work very well.
Drop the remaining batter over the filling mixture, leaving some space between spoonfuls when possible.
Sprinkle the top generously with cinnamon and sugar, then place in the microwave for 12 minutes, checking after about 8 minutes, or until cake tests done.
Let cool for 2 minutes before slicing and serving.
Then, allow it to be breakfast in bed for the mother in your life, whether it’s your wife, your mom, or any other woman you admire and love. This coffee cake is so easy, there’s no excuse to miss out on making breakfast in bed this year! Plus, the filling is so nice and buttery, you’ll definitely have to try it.
- 2 C + 1/4 C Biscuit Mix (like Bisquick)

- 8oz Sour cream
- 1 egg
- 1/4 C brown sugar
- 1/8 C butter
- 1/2 t cinnamon
- Nuts, optional
- In a bowl, combine 2 cups biscuit mix, 2 Tablespoons sugar, sour cream, and egg until combined into a thick batter. Spread half of the batter in a greased, microwave safe dish.
- In separate bowl, combine 1/4 cup biscuit mix, brown sugar, and butter, then sprinkle on top of spread batter. Add nuts at this time if desired.
- Drop remaining batter by spoonfuls on top of filling, leaving space between spoonfuls when possible.
- Sprinkle top with remaining sugar and cinnamon.
- Bake in microwave for 12 minutes, checking after 8, until cake tests done. Rest for 2 minutes before cutting to serve.
- This is delicious paired with fruit or your favorite morning beverage!
