You know I love easy weeknight meals. Life is busy, but dinner should NOT be a hassle. That said, I don’t usually want to sacrifice taste, or heck, elegance. That’s where these Kielbasa Pepper Cups come in. Starting with some wonton wrappers from the produce section, a few fresh peppers and onions, and your favorite kielbasa (or use Polish sausage, I won’t tell), and you’ve got dinner. Easily.
The start to these cups is definitely some high-quality kielbasa. Pick your favorite brand and grab some peppers and onions. You’ll want to dice all of the pepper, onions, and sausage.
You’ll want to make sure everything is bite-sized, because it needs to be relatively small to really work well for the recipe. You’re putting it in small cups, so small bites is a big help to making sure you can enjoy the full flavor of each component.
While you’re dicing your vegetables and kielbasa, go ahead and make one cup of your favorite quick rice, also.
After the rice is ready and everything is diced, it’s time to make the Kielbasa Pepper Cups! To form the cup, simply overlap two wonton wrappers. You’ll want them to be askew to give them a sturdier base.
Place about a teaspoon of rice in the bottom of each cup, then top it with a teaspoon of cheese. I love marble jack for this, but cheddar will work just fine, also! If you want a kick, pepper jack will even work well for it.
After you’ve added the cheese, add your kielbasa to the kielbasa pepper cups, and dinner is over halfway done!
Top the cup with a handful of peppers and onions until the cups are full. You’ll want them completely full, because as they cook, the peppers and kielbasa will shrink slightly, and you don’t want them underfilled at the end.
Bake the kielbasa pepper cups at 350 for about 15 minutes, until the peppers begin to get tender and the sausage is hot throughout. Add a teaspoon of cheese to the top of each cup, then place back in the oven for 5 additional minutes. Remove and serve hot!
My favorite thing about these pepper cups is that they’re delicious and oh-so-easy to make, but my second favorite thing is that they clearly look elegant enough to serve at a get-together or party, too! Perfect balance between weeknight meal and fancy appetizer, and they’re super filling! Just toss a salad and some fresh fruit on the table and you’ve got a well-rounded, delicious meal the family will enjoy. This has a great crispy exterior, too! YUM!
Kielbasa Pepper Cups Recipe
- 1-2 bell peppers, assorted colors
- 1 medium onion
- 1 pkg kielbasa
- 1 C rice, cooked
- 2/3 C cheddar cheese plus 1/3 C cheese for topping.
- 1 pkg wonton wrappers
- Overlap two wonton wrappers and place in greased muffin tin.
- Place spoonful of rice in the bottom of each wrapper.
- Place spoonful of cheese over rice, then layer on kielbasa, peppers, and onions.
- Bake at 350 for 15 minutes.
- Remove from oven, add additional cheese, and return to oven for 5 minutes.
- Serve warm.
