It was 4 o’clock again, and I had forgotten to let any sort of meat thaw for dinner. Dinnertime was rapidly approaching, and my plans of any kind of decent meal were flying out of the window because… no meat, no dinner. I live with some total carnivores! But then I remembered I had ham in the fridge, and that’s when ham and cheese lasagna roll ups popped into my mind. They’re the perfect effortless weeknight meal.
To make these easy roll ups, start by boiling your lasagna, or by soaking no-boil lasagna in the hottest water you can stand (careful to not let them overlap– they’ll stick to each other!)
In the bottom of a 9×13 baking dish, spread a thin layer of alfredo sauce. This will help the lasagna to stay moist in the pan while baking.
Take each piece of lasagna and spread a thin layer of mustard over it, then layer on half slices of swiss cheese. Top with ham.
See, I’ve tried to have some meatless meals, but my family keeps going back to meat over and over again, and that’s why we like to keep lunch meat like ham in the fridge for those last-minute “crud, I forgot to lay out meat” moments. If I don’t use them for dinners, we’ll surely use them for lunches. You’ll need a couple of slices of ham for each roll up, covering it from one end to the other.
From there, all you really have to do is roll up the ham and cheese lasagna roll ups and place them close to each other in the pan. The close proximity really helps to keep them from unrolling, and it helps the roll ups to stay moist as well.
Spoon a little more alfredo over each one, and then sprinkle with a generous amount of minced garlic.
Each cheese roll up deserves a generous helping of shredded cheese, too. I mean, I know they’re ham and cheese lasagna roll ups, but the emphasis is on the cheese for sure.
Once they’re thoroughly cheesed and baked, you’re able to serve. My family ate these up, y’all. They’ve got just enough meat in them to satisfy the carnivores in my family, but they also have a lot of delicious flavors, and the best part is that they’re super simple to make.
