Looking for the perfect breakfast for Christmas morning? This isn’t your grandma’s fruitcake– these pancakes have all of the great flavor of fruitcake, without the craziness. Fruitcake kind of gets a bad reputation, but done right, it can be flavorful and a whole lot of awesome. Plus, these fruitcake pancakes are super easy to make, so the whole family will love them! I’m so excited to share this easy recipe with you– try it this Christmas morning and let me know what you think!
Start with your favorite pancake recipe. You can definitely use a mix for this one, if you’d like. If you’re using a mix, add 1/2 tsp imitation rum extract to the milk or water. If you’re looking for the perfect scratch recipe, start with 1 1/2 cups of flour, 2 Tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoons salt in a bowl. In a separate bowl, combine 1 cup milk, 2 Tablespoons melted butter, 1 egg, and 1/2 teaspoon of imitation rum extract. Mix the dry ingredients into the wet ingredients with a whisk, being careful not to overmix– there will still be some lumps. You’ll want to make your pancakes on the thicker side for this recipe, so make sure it’s a good thick batter.
In a separate bowl, prepare some fruitcake filling mix (I bought mine pre-packaged in the baking section of my local store) and some walnuts.
Spoon your batter into a greased pan over medium heat and sprinkle it with fruitcake mix and nuts– about a tablespoon of each for a larger pancake. When bubbles start to form on the top, flip your pancake over, cooking until pancake is done, then placing, toppings-side up on a plate.
Top with extra fruit pieces and walnuts, or your favorite pancake toppings. Then, give it a generous drizzle of maple syrup.
- 1 1/2 C flour
- 2 Tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 C milk
- 2 Tbsp melted butter
- 1 egg
- 1/2 tsp imitation rum extract
- Walnuts and fruitcake fruit mixture (1 Tbsp per pancake)
- In a medium bowl, mix together dry ingredients, setting the walnuts and fruitcake mixture aside for later.
- In a large bowl, mix together wet ingredients.
- Mix the dry ingredients into the wet ingredients (a few lumps are fine!)
- Spoon pancake batter into greased pan over medium heat.
- Sprinkle 1 Tbsp fruitcake mixture and 1 Tbsp walnuts onto batter in pan.
- When bubbles form on top, flip pancake and cook until done.
- Serve with additional nuts, fruitcake fruit mixture, and syrup as desired.
