In the winter, I’m usually craving a great, super warm, hearty comfort food, and I can’t seem to get warmed up unless I get it. For me, one of the best choices, when I’m a little chilly, is to make some soup, but I’m rarely in the mood to have to fuss with it if I don’t have to. I love this super simple (souper simple? Ha!) Crock Pot Potato Soup because it tastes amazing, but it also makes life so much easier because you just put it in the slow cooker and go!
Growing up, soup always evoked memories of comfort and feelings of warmth. Not only is soup itself warm, but my mom always made spectacular soups when I was a child. The thought, the smell, just makes me feel so warm and cozy. That’s why I now love soup as an adult, and why I am always seeking simple soups that taste like the ones my mom makes, without a ton of effort.
Your soup is going to start with 8 large baking potatoes and a large onion, so simply chop them up so they’re even in size, about 1/2 inch cubes.
Add the potatoes and onions to the crock pot, then go ahead and pour in chicken broth, some water, and some minced garlic. You’ll also want to add a stick of butter– this improves the flavor and helps the soup get extra creamy and smooth on the tongue.
This is also the perfect time to add any other seasonings– I personally like to use salt and pepper. Cover and cook in the slow cooker on low for roughly 6-8 hours, and go about with the rest of your day. One of my favorite things about crock pot potato soup is that I have all day to do what I want, whether it’s teaching school, working on a project, or getting some work done, and I know dinner will be ready without me having to fuss with it at all.
Once the potatoes are tender, and about 30 minutes before you plan to serve the soup, add in 2 cups of half and half, a block of Colby jack cheese, and a quarter cup of green chopped onions.
Give it just enough time for the cheese to melt, and your soup is ready to serve to your family!
I’ll be honest… this soup is one of the easiest soups I’ve ever made. And you know what? My family loved it. For me, a slow cooker is a great way to make soup, allowing me to just set it, forget it, and move on with my life.
Of course, you always have the option to load this puppy up with all of your favorite potato toppings… I like to add cheese, green onions, sour cream, and bacon pieces!
Crock Pot Potato Soup Recipe
- 8 large baking potatoes, diced
- 1 large onion, sliced thin
- 32 oz chicken broth
- 16 oz water
- 1 stick butter
- 1 Tbsp minced garlic
- 1 Tbsp salt
- 1 tsp pepper
- 2 Cups half and half
- 8 oz colby jack (shredded or diced)
- 1/4 Cup chopped green onions
- Sour cream, bacon, cheese, and green onions (optional)
- In a crock pot, place diced potatoes, sliced onions, chicken broth, water, butter, garlic, salt, and pepper. Cover and cook on low for 6-8 hours or until potatoes are tender.
- Add half and half, colby jack cheese, and green onions, stirring. Cover and cook 30 minutes longer.
- Serve hot and top with additional toppings if desired.
