It’s no secret that I’m quite the coffee addict. And with coffee comes a very strong-handed pour of flavored creamer, which, you know, has all kinds of sugar… and calories… and other fun stuff that is far from healthy OR natural. As I’ve worked really hard to lose some of the weight I put on over the past couple of years, I realized I had to make some changes. That meant cutting back on coffee (it’s just too hard to drink it without the flavored creamer) and cutting back on my sugar intake, too. That’s where Bigelow Tea and Truvia zero-calorie natural sweetener come in. And what’s tea time without a delicious, low-sugar treat? That’s where this delicious cranberry pecan tea cake come in! Made with Bigelow Tea and Truvia natural sweetener, you’ll not even believe me when I say it’s low-sugar, because it doesn’t taste like it!
We stopped by our local Target to pick up Truvia and Bigelow tea (and tried to avoid the pull of that tempting $1 spot in front as much as we could! I’m not sure I can cut back on sugar, coffee, and impulse buys all at once). Neither Truvia or Bigelow tea are hard to find at Target– you can easily locate the Truvia natural sweetener in the baking aisle near the sugar, and the Bigelow tea is in the coffee and tea aisle, with plenty of varieties to choose from.
Truvia gets its’ natural sweetness from the Stevia plant, and its’ bulk from Erythritol, which is naturally found in fruits. The best part is that Truvia is Kosher, Gluten-free, Natural, and Diabetic-friendly, which means even my dad can use it!
Bigelow has been around since 1945, and it’s been good all that time. The thing I love most about Bigelow tea is that every time you open it, it tastes amazing. Why? Because they lock the freshness in by sealing the tea in a foil package. This means the aroma stays in, and the world stays out until you open that packet. And that’s pretty fantastic.
But as I’ve said, every great tea time (whether you’re enjoying your tea at breakfast or in the afternoon) deserves the perfect tea time treat. And that’s where these delicious cranberry pecan tea cakes come in. The brilliance is that they’re made in bar form, so they’re easy to make, slice, and serve warm.
You’ll start by following the steeping instructions on your favorite kind of Bigelow tea. I used Bigelow’s Plantation Mint, but you can use whichever kind you prefer. I really love the natural spearmint aroma from the Plantation Mint. Preheat the oven, and then melt butter, combining it with 1/4 cup of tea.
In a separate dish, whisk together eggs, sugar, Truvia, salt, vanilla, and milk. Why sugar AND Truvia? While Truvia helps replace the sweetness by being actually sweeter than sugar, sugar is what allows baked goods to brown a little more easily. You can use a Truvia baking blend, but for this recipe, you’ll just be replacing quite a bit of the sugar with Truvia, and leaving a tiny bit in for the browning factor.
Add the Truvia and egg mixture into the tea and butter mixture until just combined. Then, sift together flour and baking powder, folding it into the batter.
Finish by folding in your cranberries and nuts, then pouring the batter into a greased 8×8 pan.
Slip the pan into the oven for 18 minutes, then remove it and cool for 20 minutes before you cut into 16 squares.
- 1/4 C Butter
- 1/4 C Bigelow tea, any flavor
- 2 Eggs
- 1/4 C sugar
- 1 Tbsp + 2 tsp Truvia natural sweetener
- 1/2 tsp Vanilla extract
- 2 Tbsp milk
- 3/4 C all-purpose flour
- 1/2 tsp baking powder
- Preheat oven to 325 degrees.
- Melt butter and combine with tea.
- In a separate bowl, whisk eggs, sugar, Truvia, salt, vanilla, and milk.
- Add Truvia-egg mixture into the Bigelow-butter mixture until just combined.
- Sift together flour and baking powder, then fold into the batter mixture.
- Fold cranberries and nuts into the batter.
- Spread into greased 8x8 pan, baking for 18 minutes. Cool for 20 minutes before cutting.
I’ll be honest, while I haven’t kicked coffee to the curb completely, I find myself looking forward to my morning cup of tea instead, and I love the variety of Bigelow tea flavors available. Pair it with Truvia, which sweetens naturally, and I know I’m making a good decision.
