Nothing says “perfect weeknight dinner” like Taco Tuesday, but seriously, sometimes you just need to shake it up. These awesome hand-held chicken taco pockets are perfect for a weeknight dinner, and they take almost no effort. If you love tacos, you’re going to LOVE these taco pockets, and they’ll be on your table in under 30 minutes.
I don’t know about you, but my family loves Taco Tuesday. From hard-shelled to soft-shelled, nachos to walking tacos, it’s always nice to have an easy meal that the whole family can enjoy (and top any way they want!). But sometimes we just need that on-the-go fix, one of those meals that can hit the table fast so we can move onto the next thing our evening is throwing at us. Busy mom life, am I right?
To make these chicken taco pockets, simply combine cooked chicken, salsa, cheese, refried beans, and taco seasoning in a large bowl. Prefer beef, steak, or turkey? Not a problem! Sub in your favorite taco meat, or even go meatless, for these taco pockets.
Next, unroll two cans of refrigerated crescent roll dough sheets. Cut each can into four strips of dough, and scoop a large scoop of the meat mixture onto the crescent roll dough.
Wrap the dough fully around the filling, sealing the edges in place gently with your fingers. Then, place the dough pockets an inch or two apart on a greased baking pan.
Bake until they are golden brown, and you have perfect pockets of taco goodness. Plus, these are handheld, so if you’re on the run to soccer practice or a basketball game, you can just grab one and eat it on the go! (No more fillings going everywhere or cracked shells on taco night!)
Chicken Taco Pockets Recipe
- 2 1/2 C Shredded cooked chicken
- 1 C refried beans
- 1/2 C salsa
- 1 C Mexican cheese
- 1 pkt taco seasoning
- 2 cans crescent roll sheets
- Combine chicken, beans, salsa, cheese, and taco seasoning in a bowl.
- Cut each crescent sheet into 4 equal strips, then scoop 1/4 cup taco mixture onto each crescent.
- Seal taco mixture in crescent, making sure filling is totally covered by crescent.
- Place on greased baking sheet, 1-2 inches apart and bake at 375 for 9-12 minutes or until pockets are golden brown.
- Try substituting your favorite taco meat in this meal, or go meatless with some beans or rice in place of the meat!
