I am SO stoked — college football season is here, and I can’t tell you how excited I am to gather around with family and friends for some good old fashioned grill-gating. Nothing makes game day better than delicious food with the ones you love while enjoying cheering for your favorite team (I know I’ll be donning crimson and pioneer blue for my alma mater this fall!) Five simple ingredients, a few minutes of prep, and some thawed ground meat are all you need for this delicious meal to be dinner-ready. The best part? You can easily serve this on game day for a great tailgating treat! Plus, the name “Hanky Pankys” just cracks me up! This is an old family recipe that my grandfather gave me, and… it’s so good. Our summer is booked with wall-to-wall travel this year. From our annual summer vacation to my kiddo’s birthday trip, we’re pretty much on-the-go all summer long this year. Soccer season is back in full swing, and my family is, of course, cheering for Sporting Kansas City. Who else would we cheer for? They’re a force to be reckoned with, powerful and exciting to watch. But there’s just something about game day, especially an away game day, that calls for good food while watching the game. That’s why we’ve been loving this copycat of a Kansas favorite– Espinaca just like the kind at Jose Peppers, a local Mexican place that we adore. This is an almost identical copycat, the perfect spinach queso recipe!

My mom is devastated, y’all. Seriously, her favorite Italian restaurant, Zio’s, closed their doors unexpectedly… and she didn’t even get to go one last time. One of our absolute favorite dishes to share was an appetizer… stuffed mushrooms. Loaded Italian Stuffed Mushrooms. Oh my goodness, these were good. Now, the chef wouldn’t share his recipe when asked, but he was kind enough to give me an idea of the ingredients they had in theirs, and this is a super close approximation to the real deal… but in jumbo form. See, they used baby bella mushrooms for their dish, but I’m all about the full-sized portabella mushrooms for mine.

There’s something seriously divine about biting into a juicy, delicious cheeseburger. My family is pretty serious about our beef and our cheeseburgers– every year, we even buy an entire cow. That’s how much we really, really like burgers. But burgers are just a pain in the booty to make for tailgating and Big Game parties.
