I’m coming at you today with not one, but TWO recipes that will be perfect for your Cinco de Mayo fiesta! You’ll love these recipes for sharing with friends, or even enjoying yourself after a long day. The first is a perfect blended strawberry mock-arita (it’s alcohol free, so even your littlest sippers can enjoy some this summer!) and the second is a hot and spicy cheese dip that will be the hit of the party, whether you’re dipping chips or the Delimex Taquitos and Rolled Tacos that pair perfectly with it!

Anyone who has been reading the blog for awhile knows that I’m all about the mocktails– like fun ones to celebrate the end of summer or delicious springtime mocktails that are party-ready. That’s why I was just dying to create the perfect Cinco de Mayo mocktail, inspired by a delicious blended strawberry margarita.

The perfect blended strawberry margarita mocktail starts with a quarter pound of strawberries, sliced and de-stemmed, and the juice of one lime.

In addition to that, you’ll also want 4 ounces of your favorite non-alcoholic sweet-and-sour mix. Add all of these directly to the blender.

Add 2-3 cups of crushed ice and blend until you have a slush-type consistency.

Before serving, you’ll want to rim your mug with a little bit of sugar. With the tart lime, some coarse sugar is a great addition. Simply dip the rim of your glass into lime juice, then again into your coarse sugar, and you’ll be all set. Want a nice, frosty mug for your frozen drink? Rinse it in room-temperature tap water, then place the mug upside down in the freezer for about 20 minutes before serving. Yum!

This drink is a little sweet, a little tart, and made with fresh ingredients that are perfect for the whole family to enjoy! And you know what it pairs really well with? Taquitos.

It isn’t just Cinco de Mayo celebrating that gets me craving some delicious taquitos– I love them year-round! Pretty much any time I’m in the freezer section at Walmart, I have to pick up some Delimex Taquitos.

We’re especially big fans of the chicken taquitos around here. But Delimex makes a ton of other great products, too, like beef and cheddar rolled tacos. What I like is that there is a wide variety of quantities available, because taquitos are perfect whether you have a crowd to serve, or just your family. Delimex is great about using time-honored recipes when they make their food, so you don’t have to– it only takes about 11 minutes to cook the product so it’ll be taquito time really fast.

And if you do buy a larger quantity, many of the products feature a reasealable bag inside… so no stale or freezer burnt taquitos or rolled tacos… hooray!

But every taquito deserves a really great dip to go with it. I love something that’s a little bit spicy, and definitely cheesy.

A 4-ounce can of drained green chiles and 1 Tablespoon of your favorite picante sauce add a really nice kick to this dip, which also uses a cup of shredded cheddar cheese and an 8-ounce block of cream cheese.

You can make this dip in the microwave, but I like to use a non-stick pan on the stovetop for quick prep. Place all ingredients in your pan or microwave-safe bowl, and heat over medium (or in the microwave, for about 3 minutes, stirring every 30-45 seconds) until melted and well-combined. Spoon it into your serving dish of choice!

While it’s also great for chips, this dip is practically made for taquitos, and definitely stands up to the taste of delicious Delimex taquitos and rolled tacos for sure. Plus, it takes minutes to make– put your taquitos in, place your ingredients on the stovetop, stirring occasionally, and blend up your mock-aritas for a party in no time.

Seriously, that’s about all it takes– 15 minutes start-to-finish for Delimex taquitos, a delicious dip, and frozen strawberry mock-aritas that will make mouths water. It’s the perfect Cinco de Mayo fiesta in minutes!
