I LOVE spicy food. I just love it. Buffalo chicken is a great way to serve chicken, but I’ve just never been able to make it at home. Until now, that is. This buffalo chicken is so delicious, and the marinade so versatile that you could use it to coat storebought popcorn chicken, too. But these buffalo chicken breasts? They’re where it’s at– I love them by themselves, or cut up over rice, pasta, or in tacos. There’s just something spicy about them, and I’m so glad I found this recipe in my family recipe box to share with all of you. My grandfather must have known what he was doing to serve this super-spicy Buffalo Chicken!
This recipe is as easy as throwing things in a bag– if you can do that, you can definitely make this super easy recipe. Start by tossing in a Tablespoon of honey dijon mustard, a teaspoon of garlic salt, and 2 cups of plain, fat free yogurt in a large Ziploc bag.
To get that bright orange, super hot buffalo vibe, go ahead and add a cup of your favorite buffalo wing sauce. You can use any kind you like, but I used this Louisiana Wing Sauce, which is the perfect consistency.
Like I said, you can toss this mixture over some cooked breaded chicken if you’d like, but my favorite way to use this mixture is as a marinade.
Seal your bag up and shake up your marinade until it’s completely mixed up.
Then, layer in a small package of chicken breast tenderloins or boneless skinless chicken breasts, and remove as much air as possible, making sure all of the breasts have a good coating in the marinade.
Let the mixture soak for at least 6 hours, but no more than about 24 hours. I like to make the marinade at dinner time one night, and prepare the actual meat for dinner the next night.
When you’re ready to prepare the meat, preheat your oven to 350, then pour the chicken and marinade into a baking dish. Bake for about 35 minutes, or until your chicken is cooked all the way through. Discard any additional marinade.
You can serve this chicken a lot of different ways, but all I know is that the best way to serve it is literally any way ever. It’s delicious– I love the idea of some buffalo chicken over rice, with bell peppers. But seriously, if you like buffalo chicken, this is totally your jam. Trust me.
- 1 small package boneless skinless chicken breasts or chicken breast tenderloins
- 1 Tbsp Honey Dijon Mustard
- 1 tsp Garlic Salt
- 2 Cups fat free plain yogurt
- 1 Cup buffalo wing sauce
- Combine yogurt, garlic salt, honey dijon mustard, and buffalo sauce in Ziploc bag.
- Coat chicken, then seal bag and sit for 6-24 hours.
- Place chicken and marinade in a baking dish and bake for 35 minutes at 350 degrees or until chicken is cooked through.
- Instead of using this as a marinade, you can use it to coat fried chicken or popcorn chicken before serving.
- Discard any unused marinade, as it has been soaking with raw chicken and should not be consumed.

I’ve made buffalo chicken sandwiches at home before, but it was definitely way more work than this. This sounds awesome for a week night dinner. Seriously, though, I need to get those sandwiches on my blog. They were also pretty tasty for a Saturday date night.
