As dip week comes to a close soon, I’ve saved my best for last, guys. Really– this is a hearty, delicious dip that could almost be considered a meal instead of just an appetizer. I challenge you to find anyone who doesn’t love a bacon cheeseburger (and finding a vegan doesn’t count!) There’s just something about it– the bacon, the ooey-gooey cheese, the juicy beef patty. But bacon cheeseburgers are just not easy party food… however, a bacon cheeseburger DIP, now, that’s another story.
What I love about this dip is that it’s quick and easy to prepare in a slow cooker. You’ll need cooked ground beef, of course, and you’ll want cooked chopped bacon. You’ll also want a diced onion, two cans of petite diced tomatoes (drained!), a little milk, cheese, heavy whipping cream, some cream cheese, beef bouillon, and Velveeta.
The dip is easy– you just put all of the ingredients into the slow cooker, give it a stir, and turn it on high for 3-4 hours, stirring occasionally. To make things cook a little faster, I like to chop my cream cheese and Velveeta into smaller pieces.
I think this dip is best served with pretzels, pretzel crackers, or ruffled potato chips because those taste like just what you’d get if you were swinging by your favorite bar and grill alongside a great bacon cheeseburger– some soft pretzel sticks or fries. It really ramps up the flavor to have the perfect dipper– because isn’t all dip just as much about the dipper as the dip, anyway? But this dip is a winner on it’s own– and it’s definitely spoon-worthy.
- 1 lb Velveeta, cut into cubes
- 2 blocks (8 oz each) Cream Cheese, cut into cubes
- 1 Pint Heavy Whipping Cream
- 2 Cans Petite Diced Tomatoes (drained)
- 1 onion, diced finely
- 1 lb ground beef, cooked and drained
- 1 pkg bacon, cooked and drained
- 4 cubes beef bouillon
- 1/2 cup milk
- Place all ingredients in a slow cooker.
- Turn the slow cooker on high and cook 3-4 hours until ingredients are melted, stirring occasionally as needed.
- Serve warm with pretzels or chips.
