Mmm… pie. It’s easily my favorite dessert for Christmas– nothing says “celebration” like a big slice of dutch apple or pumpkin pie. But sometimes, you need a little twist on a classic, and that’s where today’s recipes come in. All you need is a couple of Marie Callender’s® Dessert Pies, a couple of extra ingredients, some Reddi-Wip®, and a mixer… and you’ll find some serious pie love.
I started my pie journey at my local Walmart store, where I picked up a pumpkin and a dutch apple Marie Callender’s® Dessert Pie, which I found on an endcap freezer. There was plenty more selection in the frozen desserts aisle near the ice cream, too! As for a topper, of course I went to the refrigerated section for the Reddi-Wip®. While at the store, I also picked up egg roll wrappers, some sweetened condensed milk, and some heavy whipping cream. For the recipe, you’ll also need an egg and some oil, both of which I had at home. I’ll add that you can make the egg rolls and the pie ice cream with any flavor of Marie Callender’s® Dessert Pies that you choose– there are a lot of great options, like Razzleberry or Pumpkin Pecan Streusel that would make delicious egg rolls and ice cream, too!
To make your ice cream, first, bake the pie. I like to put a little foil on the crust of the pie before baking according to the package directions, because it helps give that golden brown color without getting the crust too overdone. After the pie is baked, let it cool completely before you move on to the next step. The hardest part of this recipe? Trying to resist eating the pies before you include them in the recipes– I almost had to swat my family’s hands away a few times! I mean, I know the holiday season is about a lot of things, including sharing the joy of pie, but a girl’s gotta make some ice cream!
Once your pie is cool and hopefully still intact, you’ll want to grab a mixer– you can use a stand mixer, but a hand mixer will work just fine. Pour in a quart of heavy whipping cream and beat it until soft peaks form. Once you’ve gotten to soft peak stage, pour in two cans of sweetened condensed milk, making sure to mix completely.
Next, dice up or scoop your pie into the bowl– I chose to dice mine to make it more manageable chunks, but you can easily just grab a spoon and toss it in!
Finish by mixing it completely and giving it a good stir, then covering it or putting it in an airtight container before freezing for at least 6 hours. This recipe makes about a gallon of ice cream, so there’s plenty for your holiday parties or just for having on hand for those pie-a-la-mode cravings!
While the ice cream freezes, you’ll want to make your egg rolls. That starts with baking your pie. For this, I went with the Dutch Apple. The thing that I love about the Marie Callender’s® Dessert Pies with crumble toppings is that they leave the crumble in a separate packet, so it doesn’t get overdone– you just add it a few minutes before the pie is done baking, and it cooks to perfection, nice and golden brown! Plus, I love seeing the chunks of whole fresh fruit that’s picked at the height of flavor… don’t you?
Once again, foil-lining the crust is the perfect way to get that beautiful golden crust without it looking over-done, so make sure to try it and tell me in the comments how it worked out for you! I use this same technique when I make a pie from scratch (and Marie Callender’s crusts are as close to homemade as I’ve found anywhere!) Let your pie cool completely before you slice it into 14 pieces for egg rolls.
To make the apple pie egg rolls, you’ll need your 14 thin slices of pie, 14 egg roll wrappers, and a little bit of egg wash.
Place the sliver of pie on your egg roll wrapper, being sure to get a good distribution of fruit filling, crumble topping, and crust along the length of the egg roll wrapper. Next, fold the two points in to create the ends of the egg roll. Pull the bottom of the wrapper up over the filling, covering the points you folded in in the first step, to make it look a little bit like an envelope. Roll the egg roll wrapper tightly around the filling, but not so tightly that it tears, then use a little bit of egg wash to seal the final edge before finishing rolling the wrapper up. Repeat this for all 14 egg rolls.
In a skillet, heat oil on medium heat until a drop of water sizzles, then place your egg rolls in a few at a time. Turn gently using tongs after a minute on each side, allowing each side of the egg roll to become golden brown. Remember, you’ve already cooked your pie, so this is just to warm up that filling and allow the wrapper to fry up to a crispy texture. Place the cooked egg rolls on a plate with a paper towel to absorb excess oil.
Serve your pie and ice cream with a little– or a lot– of Reddi-Wip®. It’s perfect for dipping the warm egg rolls into!
Seriously– warm egg rolls filled with slices of pie, and rich ice cream with swirls of pie and bits of crust throughout… how can you beat that?! It’s the perfect holiday dessert that’s great for anytime, too.
Of course, in the season of giving, it’s probably not nice to keep all of this yumminess to yourself… so be sure to share the joy of pie by sharing these desserts with your family and friends. But also don’t forget to bring cheer and good will to your neighbors with a gift of pie!
Of course, one way you can share the love this holiday season is to drop a fun gift off at your neighbor’s doorstep. A nice baked pie, some egg rolls or a pint of ice cream, and their favorite coffee are great options. However, I like to share the joy of pie with my neighbors by leaving an unbaked Marie Callender’s® Dessert Pie and some Reddi-Wip® so they can enjoy it whenever they have a moment where they just need some pie. Since the pies bake pretty quickly, it doesn’t take long to go from doorstep to dessert, but it can also be stashed in the freezer for a later date (when everyone is bringing baked goods to friends and loved ones, a dessert that will keep in the freezer for a few weeks is always appreciated!) Just make sure your neighbors are home when you deliver the gift– you don’t want that pie to go to waste by not being keeping it frozen!
To turn a can of Reddi-Wip® into a super-giftable, super-adorable reindeer, you’ll need two wiggly eyes, two brown pipe cleaners, a red pom pom, and some glue. Start by wrapping one pipe cleaner around the cap, securing it with a twist (just like a twist tie on bread!) leaving the two ends pointing up like little antlers.
Slip a second pipe cleaner through the back of the first pipe cleaner (right where the twist is) and give the second pipe cleaner a twist… then, wrap it and bend it around the original pipe cleaner antlers to create some extra little bits on the antlers.
Turn the can around to the front and secure two wiggly eyes and a red nose to the can using a little dab of glue.
That will turn it into Rudolph the Red-Nosed Reddi-Wip®, and will make it a perfect addition to a Christmas basket for your neighbors or friends!
Just tuck the can into a nice basket of goodies including a Marie Callender’s® Dessert Pie, and you’re all set for giving!
Of course, don’t forget to treat your own family this season… trust me, you definitely want to try these egg rolls and ice cream made with pie and just a few other ingredients at home!
