I was watching a lecture the other day about how getting older changes your perception on the length of a year. When you turn two, one year is literally half of your life, so it seems like it took a long time. At age 5, a year is 1/5th of your life, but when you’re in your late 20s like I am, one year is just 1/28th of your life, and it seems to really fly by. So when we set resolutions for the year, one of two things usually happens: we’re too busy to take them seriously and ditch them by March, or we realize the year flew by and we forgot to really give it a proper go. It got me thinking about the importance of setting smaller goals, perhaps even daily goals. Maybe this year, instead of saying “This year, I’ll accomplish something big,” I’ll start my day off saying “Today, I’m accomplishing this.” That isn’t to say I don’t have long term goals, but sometimes having a good year is as simple as saying “today, I’m going to start my day off right with breakfast before I dive into my extensive to-do list.”
Sometimes it takes a simple plan, a simple trick, and for me, that is a little spoonful of goodness to start my morning. I love just a bowlful of Post Great Grains Blueberry Morning, for example, mostly because I love blueberries, I love the crunch of the cereal, and I love that it has 12 vitamins and minerals and plenty of fiber to kick start my day. My newfound “daily resolution” to eat breakfast is why I rarely go to Walmart without picking up one of my favorite Post Cereals, from Shredded Wheat to Post Cereals Raisin Bran (because who doesn’t love 23 grams of whole grain goodness and hundreds of SunMaid Raisins inside each box? Hello, the more raisins the better!)
But a lot of times, even though I’m trying really hard to eat a good breakfast each day, I realize I just don’t have the time to sit down and enjoy it… that’s where these strawberries and yogurt muffins come in– they’re perfect for grabbing and going, getting moving during the day, and enjoying a spoonful of goodness, sans spoon. Because they’re packed with awesome ingredients, and they taste great, the whole family will love having these muffins as a breakfast treat or packed alongside their lunch for the day. Plus, they’re super simple to make. Like… as easy as grabbing your favorite boxed mix easy to make.
You’re going to start with some Post Cereals Shredded Wheat Original. See, it isn’t just good in a bowl with milk, but it also makes a great start to these muffins. Simply crush some up until it’s about the consistency of flour in a large bowl.
Next, you’ll be adding flour and sugar, whisking the dry ingredients together. Then, simply add in a container of your favorite strawberry yogurt (I really like thicker custard varieties, and yes, your favorite Greek yogurt will work perfectly, too!), eggs, and one mashed banana. Yes, for real, there’s no oil or water needed in this recipe– you’ve got everything you need in the yogurt, bananas, and eggs when it comes to liquid ingredients, making this a little bit of a better-for-you option, too. Mix the ingredients together for a consistency of muffin batter– a few lumps are okay. That’s likely bits of yummy banana floating around!
Now it’s time to add the real-deal, wholesome, awesome ingredients that make these muffins a little bit more amazing. Shredded Wheat Original adds a little bit of texture to the muffins, sure– you’ll want some large chunks stirred in– but did you know that Shredded Wheat is SO good for you that 9 out of 10 doctors recommend it to reduce heart diseases? That’s a pretty big deal for me, because when the kiddo was born, I had heart failure. While I’ve recovered fully from my heart failure, heart health is something I do take careful consideration about… so when I know that eating a good breakfast of Shredded Wheat plays a role in reducing my heart disease, I’m totally on board. Plus, it has a whopping 49 grams of whole grain in each serving and 9 grams of fiber. Yes, please! In addition to the Shredded Wheat, you’re going to want to stir in strawberries. If they’re in season, always go for fresh, but if they’re not, strawberries from your freezer section will work just as well!
Fold your strawberries and shredded wheat in gently, and now you’re all set to bake.
Scoop your batter into muffin liners– I love a good liner because it means it’s way easier to enjoy my muffin on the go or just pop it into a lunch box while we’re heading out the door. These funky pink ones were perfect for the upcoming Valentine’s season, too!
Once you’ve baked the muffins, you’re really all set to go. It’s a different way of enjoying cereal and milk, sure, but it’s delicious and perfect for those mornings where you just can’t seem to sit down and enjoy a bowl of cereal. I seriously can’t overstate how much a good breakfast means starting the day off right. Since I’ve started incorporating my daily resolution to have breakfast in the mornings, I’ve noticed that I’ve been snacking less, laying off the little snacks that I used to have to power me through the morning. The fiber helps me stay full, and the wholesome quality of the Post cereal helps me feel my best. The best part? There’s a ton of variety, which means everyone in the family is happy, whether we’re enjoying Great Grains with their awesome fruit choices, or Shredded Wheat, which is one of my morning staples.
- 1 C Flour
- 1/2 C Crushed Post Shredded Wheat
- 1/4 tsp salt
- 1 container (5.3 oz) strawberry yogurt
- 1 C sugar
- 1 tsp cinnamon
- 3 eggs
- 1 tsp vanilla extract
- 1/2 c mashed banana
- 1/2 c Post Shredded Wheat (lightly broken)
- 1/2 c Strawberries (fresh or frozen)
- Mix together dry ingredients with a whisk (flour, crushed Shredded Wheat, salt, sugar, and cinnamon).
- Stir in wet ingredients until fully combined and muffin batter consistency.
- Gently fold in lightly broken Shredded Wheat and strawberries.
- Scoop into muffin liners, filling 2/3 full.
- Bake at 325 for 22 minutes, or until muffins are golden.
When it comes down to it, I think most of us are looking back at 2016 and saying “yeah, we can do better.” And for me, that’s very true. Sometimes a good year, a good day, starts with one decision… and sometimes that one decision is simply “Do I want my Shredded Wheat in a bowl or in a muffin?”
