A couple of weeks ago, I gave you a little sneak peek at my biscotti and promised it was coming soon… so I hope you’re ready, because here it is! I recently signed up for the Food Blogger Cookie Swap, which is basically like this really fun cookie exchange with awesome bakers from across the country. Since I needed cookies that would mail well, I decided to experiment with some Biscotti. And here’s the great news– this biscotti? It’s crazy easy.
If you want a crazy easy biscotti, you need to start out with a cookie mix. That’s right– you can start with a mix.
You’ll need to start out with a few ingredients– a cookie mix, some butter, an egg, a little flour, and some Wilton candy melts. Pictured are the ingredients for two sets of biscotti. You can really kick it up a notch with your gift giving by making a variety– this biscotti has so few ingredients and doesn’t take a ton of work, making it perfect for making a bunch!
To make the biscotti, you combine your cookie mix (Betty Crocker Maple Bacon for these photos– yum!), your flour, butter, and egg in a bowl, making a thick dough.
Shape your thick dough into a flat log with your hands, and place it on a greased cookie sheet, then bake. Once it’s baked, let it cool for ten minutes.
Turn them onto the cut side, bake some more, then flip them after half the time, and bake them again– easy peasy! Once they’ve cooled overnight, you can melt up some Candy Melts and drizzle them over the biscotti. Do you see how easy this is? You really can’t make it any easier! And because you can use pretty much any cookie mix, your varieties are endless (and seasonal!) For Christmas, I made Maple Bacon, Salted Caramel, Caramel Apple, and Brown Sugar Cinnamon. But there are plenty of great, delicious cookie mixes year-round… in fact, I just stumbled on a chocolate cherry cookie mix yesterday from Betty Crocker, and I know it’s going to make an incredible biscotti, too!
Be sure to dip them in some delicious coffee. Or, y’know, a peppermint mocha.
- 1 (1 lb 1.5 oz) cookie mix, any flavor
- 1/3 Cup butter, softened
- 1 Egg
- 1/4 Cup all-purpose flour
- Wilton Candy Melts or other Chocolate for drizzling
- Preheat oven to 350 degrees.
- In a large bowl, combine cookie mix, butter, egg, and flour until a stiff dough forms. Shape the dough into a flat log shape on a cookie sheet, then bake for 20 minutes until golden brown.
- Cool for 10 minutes, then cut into strips just under an inch in width. Place the slices cut side down on a cookie sheet, bake for 6 minutes, turn, and bake for another 6 minutes.
- Cool completely, then melt candy melts. Drizzle biscotti generously.
- Shake things up and try some different flavors of seasonal cake mix. Tie it up in a bag and give it to your favorite coffee lover with some freshly roasted coffee beans, and they'll be in heaven!
